Pumpkin Pancakes

My kids love pumpkin bread and i had some leftover pumpkin so i thought i would make them some pumpkin pancakes for breakfast. I was very disappointed in this recipe. They were very dense and heavy. Will look for a different recipe next time.

Peanut Butter Cup Brownies

My friend got me hooked on these a couple of years ago. They are SO simple and SO good. I make them every year at christmas. I put them in goody bags along with oreo truffles, and pass them out to my kids teachers and family.

Easy Spinach Lasagna with White Sauce

I made a variation of this recipe last night. I used this recipe as a base, but changed up the ingredients. The cheese layers i used were mozzarella and provolone. Because the alfredo sauce and the cheeses are so rich, i used cottage cheese instead of ricotta to lighten it up. I used 2 jars of Ragu alfredo sauce. And because my kids aren't spinach eaters, i sauted 1 each yellow squash and zuchini with 3 cups of diced grilled chicken that i had leftover from the night before. It came out great! Thanks Juanita for the idea!

Tender Italian Baked Chicken

This was great. I used chicken legs instead of breasts (because that's what i had thawed out) but i plan to make it again with breasts. My family LOVED them. This recipe will be a week night regular from now on!

Chicken Breasts in Caper Cream Sauce

I made this last night, with a few variations. Actually, the variations would probably make it a different recipe but since i used this recipe as the base i wanted to rate it. I seasoned the breasts with the same spices in the recipe (lemon pepper, garlic powder, salt & pepper). However i stuffed my chicken with a ham slice and swiss cheese, sealing it with toothpicks. I seared each side in the butter. I removed the chicken and added the cream and fresh dill, salt & pepper to the pan. Let that cook for a few minutes, then added the chicken back in the pan, cover and simmer until the chicken is cooked through. I did not add capers because my kids wouldn't have touched it if i did! I know, a lot of variations..... but very good!

Grandma's Gnocchi

I made this last night with leftover mashed potatoes. I followed the directions, but they didn't seem as firm as I would like them to be. This was my first time making them so i might have done something wrong :(.... However, while they weren't stiff enough to hold up to pasta sauce, i put them in the fridge to add to chicken & dumplins tonight! They are perfect for that!

French Toast Casserole

The texture is good, but i took the advice of others and added a tsp of cinnamon, a pinch of nutmeg, and a 1/4 c brown sugar. I also added a handfull of craisons. Overall, pretty good.

Jamie's Black Beans and Rice

Suggestions: Saute rice in oil, add 1 package sazon and 2 tablespoon tomato (or the "red") sofrito, 1 tablespoon fresh chopped cilantro, 1 tsp chopped garlic, stir around for a minute then add liquid (preferably chicken broth). Keep an eye on it and when it starts to thicken up, add the "drained" and "rinsed" (very important) black beans.

Big Soft Ginger Cookies

These cookies really live up to their name. They are big, soft and so good! I took the advice of others and let them chill for awhile so that I could handle the dough more easily and I also patted them down prior to baking. I will be making them again for Christmas!

Onion Chicken in Balsamic Sauce

Oddly enough, the day I read this recipe I too was wondering what to make with the legs & thighs that I thawed out! And i had all of these ingredients except the tomatoes and balsamic vinegar, but I had a whole bottle of red wine vinegar. It came out wonderful. It's perfect for a quick weeknight meal!

Moussaka

I'm not sure if anyone else had this problem, but my eggplant absorbed the oil like crazy! I went through a lot of oil trying to fry the eggplant, so it ended up coming back out in the baking process, leaving the final dish very loose & oily. I followed the suggestions of adding egg white to the sauce and yokes to the meat but it still wasn't firm enough. On the upside, the taste was very good. I will try making this again, but will brush the outside of the eggplant with oil and prebake them instead of frying. I love the taste, so i'm going for it again!!

This recipe was a hit at my halloween party! I layered everything in a 9x13 glass pan and made a graveyard on top with lollipop ghosts and cookie tombstones. Turned out great, thanks!

Witches' Brew

I made this punch at our halloween party and it turned out great. The stars are mainly for the hand, because the hand turned out fantastic! In lieu of ginger ale, i used green stawberry & kiwi flavored punch so there was a color contrast, plus my kids aren't crazy about ginger ale. As the fingers started to melt, the hand looked more like a heart and the melted fingers looked like blood. The other change I made was using a package of black cherry gelatin in lieu of unflavored. It really made the punch taste great and gave the hand the deep red color! Thanks for the recipe!

Cream Cheese Frosting II

I used the recommendation to add cocoa and it was very good. It is very creamy and almost tangy due to the amount of cream cheese, but it paired well with my rich chocolate cake with strawberry filling. Overall, very good.

Banana Crumb Muffins

These are delicious! The only thing I changed was adding the topping 5 minutes before muffins were done (thanks to a tip from another review) and I added 1 tsp oil to the wet ingredients. These are so good and I will make them a part of my weekend breakfasts every time I have some ripening bananas!

Blue Cheese Chicken Wing Dip

I made this recipe last night for a dinner party. It got great comments! I did take the advice from other members by using canned chicken, using less hot sauce and alternating between ranch & bleu cheese dressing until it was the right consistency. It turned out pretty good. Be warned...it's pretty hot.

Smothered Pork Chops

Smothered chops are a traditional southern comfort food served over a bed of white rice. This recipe is not the best (or tastiest) way of preparing it. Follow this instead: Heat veg oil in deep pot, season your chops (use bone in chops, not boneless) with salt & pepper or even seasoning salt, dredge chops in flour, fry chops just until brown on each side (chops will still be raw in the middle), remove & drain on paper towels, remove all oil from pot except approx 1/4 cup, add onions & sliced bell peppers, brown until tender, add chops back in and add just enough water to cover chops, cook covered on med/low for about 45 minutes. You can stir it a couple times just to make sure everything is cooking evenly. The chops will be tender and a delicious gravy will be ready to add to the rice. Enjoy!!

This is a good base recipe with plenty of room for modifications. Here is how I prepared it: I fried 2 cups white rice in 3 tablespoons olive oil, added 3 tablespoons sofrito instead of the cumin, 1 package sazon seasoning, 1 cup tomato sauce & 3 cups chicken broth. Then I added 2 cups pigeon peas. After I made it, I asked my neighbor who is from Puerto Rico what she thought and she was impressed! It was delicious!

Peach Ice Cream

My 5 year old Emma helped me make this ice cream last night. It is delicious! The only warning is the recipe actually makes 2 batches for the standard size ice cream maker. I reccomend cutting the liquids in half. It's yummy!
