The time I burnt water trying to hard boil eggs....took me 45 minutes to hard boil 3 freakin' eggs...essh...burnt water stinks by the way.

Macaroni Salad for a Crowd
The first time I made this was A LOT of salad. If taking something to a pot luck or family dinner I would recommend this. If making for yourself or a side for dinner I would recommend cutting the receipe in half. I did the second time and it made just enough. The salad was really good and my fiance LOVED it. This is a receipe I'll be putting in my receipe box.

Layered Chicken and Black Bean Enchilada Casserole
This was REALLY good! Not to mention easy to make...especially for someone who burns water. I love authentic Mexican food and was leary to try (I'm not a fan of black beans) but this surprised me. It had just enough spice, with a little kick, but not overwhelming. I think I'll try shredded chicken next time instead of diced, because I WILL be making this again.
