Slow Cooker Beef Stew I
Excellent meal! I prepared exactly the way suggested and it was great. Its very easy just putting in the meat without cooking and it still came out very tender. I cooked on high for 5-6 hrs. If you cook for that long, I would suggest checking it often so it doesn't dry out. This is a definate keeper for the menu.

Chicken Enchiladas II
Great recipe. I did make a few changes. I now cook my chicken in the slow cooker with 1 can of tomato sauce & 2 cups of water w/seasonings added. After about 3 hours chicken is very tender and I then shred. After rolling the enchiladas I use the left over sauce from the slow cooker and pour over enchiladas. Depending on how chicken is, I may pour some on after shredding. Always comes out tender, juicy, and with lots less heartburn.

Ten Minute Enchilada Sauce
Came out good, but hello heartburn. I switched to cooking my chicken in the slower cooker with 1 can of tomato sauce & 2 cups of water w/ seasonings. Much milder but still has lots of flavor. Also cut back on the chili powder.
