Fiery Fish Tacos with Crunchy Corn Salsa

I was slightly hesitant with this one b/c I had never had the jicama before. Other reviews who had described it as a cross between a potato and a water chestnut were correct. All of the ingredients together were a perfect blend. One review stated they added a jalapeno, cilantro, garlic, and salt to the sour cream as like a sauce and that paired with this salsa was PERFECT! After eating this with fish, I even ventured off and used it as an actual salsa with tortilla chips and then the next day with taco meat and Spanish rice. This is definitely a multi-functional (healthy) recipe and I will be making it again. Oh, and please remember to use red BELL peppers, not red spicy peppers. This was not a hot salsa at all, it was very mild.

Blueberry Crisp I

This was really good - some people made comments about there being too much sugar or there should have been cinnamon instead of nutmeg, but this wasn't a blueberry cobbler recipe, it was something different and it was delicious! I followed the instructions exactly and it came out perfect! It would have been even tastier with a scoop of vanilla ice cream but I didn't have any :( Otherwise, this was perfect and we'll be making it again. Thank you for sharing!

Heather's Cilantro, Black Bean, and Corn Salsa

This was good, but it desperately needed salt. I ended up cutting the recipe in half because the original made a huge amount and I also substituted the red pepper for a jalapeno pepper....gave it the perfect amount of heat. This is a good base recipe, you can tweak it to just about anything to suite your own tastes.

Avocado, Tomato and Mango Salsa

Mango salsa has scared me for a while, the thought of such a sweet fruit in a salsa didn't seem quite right. But my curiousity got the best of me and was SOOOO glad I tried this recipe. All of the flavors blended so well together, even the kids loved it. We ate this ontop of beer battered fish tacos and it was perfect. I think we will be fighting for the leftovers today, haha, thanks so much for sharing.

Beer Batter Fish Made Great

I made this last night and it was AWESOME! I've tried several different beer batters and they've all been lacking that pizzaz. This certainly did the trick - it was thick and had lots of flavor. We made these into fish tacos with a mango, tomato avocado salsa also on this site, they were super delicious! We will definitely be making these again. Thanks so much for sharing.

Apple Pecan Cornbread Dressing

This was pretty darn good - a great alternative to regular stuffing. I had a great recipe for my own cornbread, so I think that helped keep it moist, that and the apple juice was good, not as sweet as I thought it would be. The only change I would make, is sprinkling the pecans ontop - we couldn't really taste them mixed together with everything else. Five stars!

Fabulous Fresh Blueberry Pie

This was indeed, Fabulous! Everyone loved it, great while still warm w/vanilla ice cream. I even attempted to make the same design in the top crust b/c it was so cute, the kids loved it, they almost didn't want to cut into it......almost!

Mini Pumpkin Butterscotch Muffins

Okay, so I accidentally read the directions wrong and added an entire can of pumpkin. BUT, these were such a hit, so moist and butterscotchy sweet, absolutely declicious. Oh, and I did put an entire bag of the butterscotch too, that was definitely NOT a mistake, lol, love them!

Downeast Maine Pumpkin Bread

Very moist, HUGE batch! I made a loaf of bread bread, small muffins and HUGE muffins topped with pecans/brown sugar and a little butter & flour - they were gourmet style muffins, YUM-O - will be making this again.

Roasted Vegetables

This was awesome - I've been looking for something that I can combine carbs and veg so I don't have to spend much time cooking, and this was definitely it. I did use different veg though, this was a great way to use up the stuff in your fridge that is on the verge of going bad. I used carrots and regular potatoes, yellow onion - then the last 15 minutes of cooking, I threw in some zucchini and mushrooms, it was perfect!!

Slow Cooker Pork Chops II
