Downeast Maine Pumpkin Bread

Hurts my teeth! I guess I am in the minority with this recipe. I am searching for my mom's (who passed away 30 years ago) old pumpkin bread recipe and thought this might be it. But it is way, way too sweet. I am disappointed that this recipe is really pumpkin cake and not a quick bread. It is very sugary without much pumpkin flavor or spice. The sugar overwhelms other flavors and converts it into a sweet confection. I should have known that 3 cups was WAY too much sugar! I see other pumpkin bread recipes call for the same 3 cups, but if you like your pumpkin bread to taste like pumpkin bread and not pumpkin cake, I would suggest using the quick bread recipes for that call for 2 cups of sugar. I will try one of those next time!

Caramel Shortbread Squares

Have made these a few times, and they are wonderful! I thought the caramel making would be challenging, but it hasn't been a problem. They taste just like Twix candy bars.

Fresh Pear Cake

Like another reviewer, I, too, cut the sugar in half to 1 cup because I had very ripe pears. It still turned out perfectly sweet and delicious. Didn't have pecans, but that was fine. As a busy mom, I also didn't take the time to peel the pears. The skin shrivels up when it bakes anyway, and no one, especially my 5 and 3-year-old, noticed or cared. It's really loaded with pears in every bite and is light and moist. Very delicious. Don't know why the recipe would call for 2 cups of sugar.

Chewy Brownie Cookies

I used less sugar--1 cup instead of 1 1/2 cups, and they were still chewy and sweet. Texture was great, but I did have to bake them longer than 7-9 minutes, more like 10 minutes.

Addictive Sweet Potato Burritos

This recipe is one of my and my husband's favorite vegetarian burritos. They are fairly easy to make, healthy, and wonderfully delicious. Have made them many times. Be careful not to add too much water or you will need to let it simmer off a while or add something like masa to thicken it. We like to make the whole batch and wrap them individually, keeping them in the fridge for an instant, yummy lunch!
