This recipe was very good and filling. I scaled it down to 4 servings and it really worked well.

Ten Minute Enchilada Sauce

I have made this several times. Better than the canned sauce and you know exactly what's in it!

Plain Egg Less Cake

Reviewed: Apr. 12, 2008
Very good cake. This tastes more like a pound cake, which I really enjoyed. I kept 1/2 cup of batter out, added 1 T. cocoa, and mixed it together. I put 1/2 of the batter in the bundt pan, put the chocolate around in the batter, and then added the rest of batter to the top. Gave it that extra little sweetness. Great recipe for us vegetarians!

Sopapillas

Reviewed: May 18, 2008
Very good recipe. Puffed up nicely. I tossed them in a cinnamon and sugar mixture. I don't think they would be very good cold. No problem--there weren't any left! They made a nice dessert for my authentic Mexican meal.

Pasta Primavera

Reviewed: May 18, 2008
This is a very good and simple recipe. I also mixed the soup mix and milk together and microwaved it for 2 minutes. I did not use as much pasta as it called for. It would be great if you added more veggies and/or chicken.

Peach Pie

Reviewed: May 18, 2008
This was my first pie. I made it as a Mother's Day gift for my Mom. I used 2 bags of frozen peaches since this is not a good time for fresh ones. I also used 3/4 cup sugar instead of 1 cup. I did add cinnamon and nutmeg although my Mother said this was not necessary.

Italian Herb Bread I

This recipe worked great. I made it on the dough cycle of my bread machine as others suggested. Next time I will leave out the cheese. Very tasty.

Butter Cream Frosting II

Reviewed: Jul. 3, 2008
This recipe turned out great. The frosting was not too sweet--just right. Make sure your ingredients are at room temperature. I used all butter. Half the recipe will frost a 9 x 13 cake.

Easy Ice Cream Cake

Reviewed: Jul. 3, 2008
I made this for my niece's birthday. She loved it. Make sure to have all ingredients ready to go as it will melt if you spend a lot of time on it. I am only giving this 4 stars as we did not care for the cool whip on the top. After being frozen it wasn't as tasty when it was time to eat.

This makes a great main dish for a vegetarian meal. I didn't have any spinach so substituted chopped broccoli and it turned out excellent!

Triple Fudge Brownies

Reviewed: Jul. 13, 2008
These were terrific. They were a "cakey" type of brownie. I did make them in a regular cake pan and baked them about 37 minutes. We ate them warm with ice cream on top. We felt these were very chocolaty. I will make these again as they were great for vegetarians (which I am). No one would know they don't have eggs. I would take these to share at any get together. Thank you!

Butter Bean Burgers

Reviewed: Jul. 16, 2008
These were very tasty. I did substitute salsa for the jalepenos as another reviewer said. However, next time I would use more. I don't eat eggs, so I put in a tablespoon of milk. I won't the next time. They didn't need it. These formed into nice patties. Very filling.

White Chip Chocolate Cookies

Reviewed: Feb. 13, 2009
Wonderful cookie! I read many reviews and I cut down on the sugar and added about 1/4 cup more flour. After testing several in the oven I did press them with a glass and they did not spread at all. I took every pan out after 8 minutes and cooled them for 5. Yummy!
