Apple Pie by Grandma Ople

Excellent! I made one two many pies and had to freeze one without baking it. I covered it with plastic wrap and then aluminum foil and froze it. A month later I thawed it for half a day and then put it in the oven as recipe says. Still came out just as great.

Mom's Zucchini Bread

This was excellent. Fast and easy. It came out moist and just the right amount of crumb. I left the zucchini "juice" in and did not find it mushy. My kids were amazed when I said the green stuff was zucchini. That still gobbled it up.

Pumpkin Pancakes

Very very yummy. If you double the recipe DO NOT double the mount of syrup. My kids are heavy handed with the syrup (try not to let them) and we did not use it all. Syrup does keep in the fridge though.

Easy Granola Bars

I used almonds, raisins, sunflower seeds and chocolate chips. My kids and husband loved them. I am not allowed to buy store bought bars anymore. I used low fat sweeten condensed milk. Turned out great. I loved them too. Think I will do a tropical one with flaked coconut, and dried pineapple and mangoes. The recipe is versatile!

Corn Dog Muffins

Made this a surprise for the kids. They loved it. I needed to use up left over hot dogs from a camping trip so this worked out great. I did not use corn bread mix but actual corn meal. I took the dry ingredients in a recipe to make corn bread and then followed the rest of the corn dog murffins recipe. I liked that I could control the sugar content. Hot dogs are already full of fat and fillers; adding sugar is not my idea of a meal you wont to give your kids.

Sloppy Joes II

Pretty good. I made them at home once and then made them camping. Since you cannot simmer things on a camp stove (only one setting for heat: HOT), after browning the meat and adding the rest of the ingredients I allowed it to cook for 4 or 5 minutes. Constantly stirring so it wouldn't burn. Still turned out great. They were eaten by the camp fire with fire roasted corn on the comb. YUM!

Super Simple Salmon

My kids loved it. Even the kid that hates fish loved it and wanted more. As the recipe says it is Super Simple. I used thawed frozen salmon patted dry with a paper towel before rubbing with ingredients. I found it a bit salty so next time I will use less salt. Might use margarine instead of butter, worried about the fat content. Salmon is already a fatty fish.

Sole with Bananas

Was very yummy. My 4 kids and husband loved it (except the kid that doesn't like fish). I omitted the wine and it turned out perfect. Make sure you do not layer the fish in the baking dish. It is very delicate and the fillets stick together making it hard to server the fillets singly. I made it twice already. This is definitely going into the rotation of weekly dinners.
