Bow-Tie Pasta With Red Pepper Sauce

Really loved having a change from tomato sauce! I doubled it and froze an extra round for another day. Instead of peas I threw in some chopped fresh asparagus and sweet pea pods with the boiling pasta. Loved it!

Basil Shrimp

I didn't want to fire up the grill, so I just sauteed the shrimp in a frying pan and they turned out great. I warmed a bit of EVOO in the pan and then poured all of the shrimp AND the marinade into the pan together to simmer. Then I poured all of that onto spaghetti so the marinade became my spaghetti "sauce" with a bit of added EVOO drizzled on (I hate to throw out good marinades!) The only other thing I did differently was marinate for 20 minutes and I did leave the shell on for cooking.

Red Lentil Curry

Loved it even though I didn't have some of the ingredients (didn't have curry paste, chili powder or tumeric). I added a bit of cayenne pepper instead and followed the directions otherwise. I thought it was great and will try it again with all the ingredients after my next grocery store run!

English Trifle

This was a hit at my 4th of July party. I just used 1 cake too, and instead of the almond slivers and maraschino, I sliced and pitted real cherries and interspersed fresh mint leaves from my garden. Yum!
