Chicken Breasts with Balsamic Vinegar and Garlic

SO delicious! I followed the recipe exactly, except I skipped the flour as others suggested. I used a bit too much oil and vinegar, so I poured some into another pan and sauteed zucchini to have as a side dish. Boyfriend said it was "on the next level."

Spanish Cod

AMAZING! I threw in some little shrimp and added a small can of diced chiles because I didn't have the vegetable salad or green olives on hand. Also added a dash of hot red pepper, only on my portion, which was delish. Made it more of a spicy Spanish cod, but it was excellent.

Pumpkin Pie Squares

Very tasty! Be sure to not bake the bottom too much because when it cooks for too long, it makes it VERY difficult to cut into. I took other people's suggestions and cooked it for longer than recommended, and this was a bad idea. Stick to the initial timing. I used more pumpkin puree (doubled almost everything because I had a big baking dish), so it took almost an hour to cook and fully set.

Perfect Pumpkin Pie

Came out AMAZING! I used fresh pumpkin puree because tis the season for pumpkins. Didn't have ground ginger, so I just used Pumpkin Pie spice. Perfect. LOVED IT!

Zucchini Apple Bread

This was SO SO delicious! I can't get enough of it! I used applesauce instead of oil (almost 2x the applesauce for oil to keep it moist), threw in an extra egg, and use a little bit more grated apple and zucchini than called for. It came out absolutely fantastic.

Crustless Spinach Quiche

Mine came out too watery at the bottom for some reason. Not sure if I didn't cook it long enough, but I did keep it in the oven for longer than it stated. Caught my boyfriend throwing his piece in the trash....
