Sweet Corn Cake

Amazing!!! I love making this as a side dish with a lighter dinner, like steak salad. The only change I make is that I have never used heavy cream; I substitute whatever type of milk I have on hand and it still turns out perfect.

Spooky Halloween Eyeballs

I am giving this recipe a lower rating because of the work it takes to make them! They taste pretty good, although I think the peanut butter filling is a little too sweet. I spent around 4 hours from start to finish on these. In my opinion, not worth the hassle, although they were a cute treat for a Halloween party.

Oatmeal Chocolate Chip Cookies I

These cookies are easy to make and absolutely delicious! I made this recipe exactly as written except for I baked the cookies for 11 minutes, then cooled them on the tray for 2 minutes before removing them to foil. The texture is perfect; slightly crispy on the outside with a chewy center. My son also loved them!

Vegetable Pizza I

This was a hit at a recent cookout. I only used one package of reduced fat crescent rolls and I also halved the cream cheese, mayonnaise and dressing mix and used low fat cream cheese and light mayonnaise which didn't affect the taste at all. I also only used 1/2 cup of the shredded cheese and then piled it with carrots, red pepper, broccoli and cauliflower. It looked absolutely gorgeous and tasted delicious. With all of the changes I made, it reduced the calories quite a bit too. I will definitely make this again!

Easy Peach Crisp II

I made this today as a special treat for Mother's Day and it was one of the easiest and tastiest desserts I have ever made. I used the large can of peaches, but halved all of the topping ingredients because I couldn't bring myself to use 2 whole sticks of butter. I used a 9 inch round baking dish and the topping was piled high even after cutting the recipe in half. I served it with vanilla bean ice cream and my husband and I loved it! It's like eating peach pie without the hassle of rolling out a crust.
