October Dinner Fondue

This was a good, inexpensive recipe for the family. We did not use cilantro but otherwise followed the recipe. It was not a show-stopping fondue, but it was one that all the kids liked. It good with everything that we dipped: cauliflower, French bread, mini ravioli, crunchy bread sticks, and some chicken nuggets.

Chicken Potpie

Super good. I have recipes for pies that use more prepared items, but this will be my recipe when I want to do it all myself. It was labor-intensive, but with the help of thefamily, it made for a great dinner. However, the recipe should state that you need pie crusts for two double-crust pies.

Asparagus Wrapped in Crisp Prosciutto

This was so tasty! Even the non-asparagus lovers at our party loved this. Wrapping the spears with the thin meat took a bit of practice, but even the ones that didn't look good still tasted great. I used half a slice of prosciutto per spear and baked 7 minutes per side. Next time, I'd skip the oil. The prosciutto creats plenty of grease as it cooks.

Pumpkin Oatmeal Chocolate Chip Cookies

The original recipe deserves 5 stars. However, my changes could make them a heart-healthier 6 ;) I used half whole wheat flour (2 cups of wheat, two of white), increased the oats to 3 cups and eliminated the white sugar (just used 2 cups brown). I also substituted some of the butter for unsweetened applesauce. The entire family likes them.

Quinoa Side Dish

A great quinoa side that would complement many different main dishes. I used dried spices (on hand) and added them when it was simmering. The kids ate it without complaining, which is rare with quinoa.

Souper Skillet Pasta

I stuck to the original recipe and was surprised both and how simple it was and at how much my family liked it. With so many people adding to or changingt he recipe and commenting, I just wanted to say that it is good on its own. Simple and good.

Pumpkin French Toast

What a great idea! I used 1/2 cup pumpkin and substituted 4 egg whites to replace two of the whole eggs. It was tastey and healthy!

Baked Yam and Potato Casserole

Super yummy! I reduced the amount of butter and cheese, and it was still good. Next time, I'm going to switch the potato layers (starting with the white & ending with the sweet) because the top layer of white potato wasn't cooked as well as the other layers and the sweet potato cooked much faster even when sliced thicker. Thanks for this "keeper"!

Lighter Lasagna

I made this without the mushrooms and enjoyed it. I did not care for the texture of the noodles which were mushy. I think I'd rather use pre-cooked noodles despite the added work and prep time. The sauce was good, and I will try this one again.

Slow Cooker Cheesy Potatoes

Coconut Poke Cake

This was a great recipe. I was able to lighten up the prepared cake by using egg whites and applesauce without noticing the change. I also found that 8 oz of whipped topping and about half the reccomended coconut was enough for us.
