Light Chocolate Chip Cookies

I was really pleased with how these cookies turned out. I substituted Splenda for the 1/4 cup of white sugar. Instead of the 6 TBS butter, I used 2 TBS light butter, 3 TBS unsweetened applesauce, and 1 TBS margarine (an odd mix, I know; I was using what I had on hand). I used 1 cup of white flour and 1/2 cup of wheat flour. Finally, as another reviewer suggested, I made sure the water I added was HOT water. I did chill the dough for a short time and baked the cookies for 10 minutes. They came out brown and the flavor was great; however, they are cake-like. I am so pleased that this yolk-free recipe tastes so good and my husband had to ask what was different to make them light.

Pumpkin Pancakes

I made a batch of these this morning and the whole family liked them. They were so thick and puffy! I made a few health modifications by replacing the brown sugar with Splenda Brown Sugar Blend. I also used two egg whites rather than one whole egg. I used half whole wheat flour and half all-purpose flour. Finally, I cut the oil to 1 tablespoon and used a tablespooon of unsweetened applesauce as well. I measured the batter by 1/4 cup as stated and this recipe made 16 pancakes. I love pumpkin, so if I were to make these to my tastes, I'd add more pumpkin puree, but the less-pumpkin-loving members of the family thought they were just right.

Pumpkin Cookies V

I thought these were super yummy! The cookie and icing combo is great. I made mine a bit healthier by replacing 2 cups of all-purpose flour with whole wheat flour and 1 cup of the shortening with 1 cup of unsweetened applesauce. I would cut the frosting down to half next time since I had a lot of it left over. This made 52 cookies for me.

Slow Cooker Cheesy Potatoes

I thought this was a tastey recipe that could be changed according to tastes with more spices. I loved that it turned out so well in the slow cooker. It was a good side for a dinner I hosted.

Fluffy Whole Wheat Biscuits

I followed the recipe as given and was very happy with the result. They weren't as fluffy as the picture, but I blame this on my own novice biscuit-making skills. The family loved them and the taste was amazing. I will make them again.

Hazelnut Chocolate Chip Scones

These taste so good! I had never made scones before, and I was very happy with the result. I was a bit confused with the fact that the directions state to cut the scones into wedges twice. A bit more explination would have been helpful. I will be making another batch soon to bring to a meeting at work.

Hungarian Goulash I

I made this for dinner tonight, and we loved it! That is saying a lot with my picky kids. I was so pleased with the flavors. I omitted the oil completely and just used a bit of cooking spray when cooking the onions. This one will be made again and again.

I loved this filling/frosting for a boxed dark chocolate cake that I made. I substituted 1/3 cup Splenda Brown Sugar Blend for the brown sugar, and it tasted great.

Chicken Breasts Pierre

This was amazing. It was a nice change from other chicken breast recipes. All five of us loved it --including my three (often picky) kids! I made the recipe as written except I used olive oil in place of the butter and left out the hot sauce. I think if I were planning on serving over noodles, rice or potatoes, I would double the sauce. I'll be adding this to our regular dinner rotation.

Filet Mignon with Rich Balsamic Glaze

Amazing! I have always been scared of cooking something like this and ruining it, but this recipe was so simple and so good! 4 minutes per side was perfect for my husband's to be medium rare. I cooked mine a little longer and it was perfect for me. Double the sauce for sure or you'll be fighting over it! I also added a tablespoon each of butter and brown sugar as I reduced it as suggested. Thanks to the original recipe and those with the suggestions I tried. I cannot wait to try this one again.

Shortbread Supreme

These taste great. Next time I'll roll them a little thicker. I thought 1/4 inch was a bit too thin, but that is personal preference and nothing to fault with this simple recipe. I made heart-shaped cookied and dipped half of each heart in chocolate.

Lighter Lasagna

I made this without the mushrooms and enjoyed it. I did not care for the texture of the noodles which were mushy. I think I'd rather use pre-cooked noodles despite the added work and prep time. The sauce was good, and I will try this one again.

Asparagus Wrapped in Crisp Prosciutto

This was so tasty! Even the non-asparagus lovers at our party loved this. Wrapping the spears with the thin meat took a bit of practice, but even the ones that didn't look good still tasted great. I used half a slice of prosciutto per spear and baked 7 minutes per side. Next time, I'd skip the oil. The prosciutto creats plenty of grease as it cooks.
