Baked Yam and Potato Casserole

Super yummy! I reduced the amount of butter and cheese, and it was still good. Next time, I'm going to switch the potato layers (starting with the white & ending with the sweet) because the top layer of white potato wasn't cooked as well as the other layers and the sweet potato cooked much faster even when sliced thicker. Thanks for this "keeper"!

One Bowl Chocolate Fudge

Cinnamon-Topped Rhubarb Muffins

These were amazing and stood up to a few more healthful tweaks. I redured the topping by half, used 2 egg whites rather than a whole egg, replaced a cup of flour with whole wheat flour, replaced over half the oil with applesauce and reduced the brown sugar by about a quarter. I love how these allow you to taste the rhubarb rather than sweeten everything too much. Thanks for a great recipe!

Real Potato Leek Soup

Peeling the hot potatoes proved difficult. The soup was a bit on the bland side, but I suppose easily adapted with some more seasonings if desired.

Asparagus Wrapped in Crisp Prosciutto

This was so tasty! Even the non-asparagus lovers at our party loved this. Wrapping the spears with the thin meat took a bit of practice, but even the ones that didn't look good still tasted great. I used half a slice of prosciutto per spear and baked 7 minutes per side. Next time, I'd skip the oil. The prosciutto creats plenty of grease as it cooks.

Lighter Lasagna

I made this without the mushrooms and enjoyed it. I did not care for the texture of the noodles which were mushy. I think I'd rather use pre-cooked noodles despite the added work and prep time. The sauce was good, and I will try this one again.
