Zucchini-Chocolate Chip Muffins

These are awesome. So moist! I cut the salt in half, because the first time I made them they seemed overly salty. I could eat a dozen of these, but I have a feeling they aren't very healthy!

Grandmother's Buttermilk Cornbread

I thought this was a really good, easy-to-make cornbread recipe. Honestly, I can't taste the buttermilk at all. That could be because my store only had 'low fat' buttermilk, though. I used only 1/3 cup sugar per other reviews. I've made it twice, being very careful not to overcook, and both times it was still pretty dry (but I blame that on my living at high altitude).

Cranberry Martini

This is dangerously good! I did add a little more cranberry juice, because it was a bit too strong for my taste as written. After that addition, though, it was awesome. Even my husband, who hates things like this, tried it and loved it.

Easy Chicken Fajita Soup

Per some other reviews, I added a can of corn and some extra chicken broth to make it more soup-like. I also cut everything into bite-size pieces and used a rotisserie chicken. My only issue was the McCormick's fajita seasoning I used (which obviously is not the writer's fault). It has a fake lime flavor that was a little odd in the soup. Next time I would use a different one, or just spice it myself. I had to add paprika, cumin, cayenne, and garlic powder to mask the fake lime taste.

Mimi's Zucchini Pie

This was great. I added fresh basil, upped the spices, added more cheese, and sprinkled bacon on top, which was an awesome addition! I don't think it needs to cook longer, unless you want to cook the life out of it. It was more bready than I was expecting.

Zucchini Herb Casserole

My whole family liked this, including my 14 month old son! Per some reviews, I upped the rice to 1/2 cup and cooked it in chicken broth. I decided not to add tomatoes because I know how that flavor tends to take over. Instead I splashed some extra chicken broth in the dish before putting in the oven to make up for the tomato juice. Upped the spices (except salt) and used less cheese---it's really not necessary. Excellent!
