About this Cook
I am a teacher at a community college, and I love to entertain. I love to have dinner parties and family gatherings, although I do not do as much now as I used to. We have a wonderful three season garden, and I love to cook from it. My mom was not a great cook, so I started cooking early, and have continued to learn from cookbooks, cooking shows and friends for the last 50 years. My grandmother was a good cook, and I learned a great deal from her about cooking
My favorite things to cook
Cookies, salads, stir fry, sauces, italian food, mexican food, asian food. I love finding new ways to cook non-meat main dishes, as well as ways to cook chicken and fish. I grew up in beef country, so I do know how to cook beef well (NOT well done!), but we do not eat as much beef as we used to.
My favorite family cooking traditions
When I was about 11 or 12, my parents were divorced, so my Dad got us Christmas Eve. My stepmother started a traditional dinner that we do to this day, 50 years later. It is a Prime Rib roast, green beans, potatoes, and this WONDERFUL tomato aspic, topped with marinated shrimp and mayonaise. Our whole family gets together on Christmas Eve and shares this dinner; the test of a new spouse is the tomato aspic.
My cooking triumphs
My pie crust, my homemade salsa, my zucchini-walnut unmeat loaf, pesto, oatmeal walnut chocolate chip cookies, hash brown potatoes, grits and vegtable casarole, alfredo sauce, turkey meat loaf, turkey and pork meat balls, fried catfish,
My cooking tragedies
I tried once to make corn chips. They were awful.

Banana Oat Muffins
These were wonderful. I used fat free sour cream (that is all I had) and cooked them in texas muffin tins, adding 5 minutes to the cooking time. They were just wonderful. Best breakfast treat ever!!
