Banana Crumb Muffins

Just baked these, and they baked up perfectly, but the baking soda flavor came through very strongly. Next time, I would cut the baking soda to half, or maybe even 1/4 of the amount.

Chinese Cabbage Salad I

I made this for a sidedish and found the recipe was great. I didn't use shredded coleslaw mix as the recipe calls for, but instead finely chopped 1/2 head of a small cabbage and shredded carrots into it. Results were delicious, but I think the shredded slaw mix would have made the vegetable-to-dressing ratio better. Using the chopped cabbage method, and soaking most of the cabbage, I still had 1/2 of the dressing leftover. Will make again.

Creamy Vegan Corn Chowder

This recipe is terrific! I have made this twice and it came out great both times. I prefer it with vegetable stock instead of the boullion. Also, make sure to use soy milk that does not contain vanilla unless you want sweet tasting chowder. A great addition (for extra flavor) to this was to add some finely chopped sauteed mushrooms.

Vegetarian Chickpea Sandwich Filling

New to veganism, I prepare this as a tuna/egg/chicken salad substitute, and its awesome! While its terrific as a sandwich filling, it is also versatile...I have had this over salad and also given it a quick rough mash to dip toasted pitas in it. There are many different ways to alter it (it came out fine using cannellini, using a vinaigrette instead of lemon, using thyme instead of dill)...either way, its delicious!

Marbled Pumpkin Cheesecake

I brought this to a family holiday dinner, and everyone kept asking where I bought it. The gingersnap crust is a winning feature....don't skip it. No cracker or cookie crust can compare to it! The only alteration I made was to toast the pecans before chopping them to give them an extra flavor boost. Also, baking the cheesecake in a water bath will keep it from cracking. I have made this 6 times, and it has turned out perfectly each time.

Broiled Tilapia Parmesan

One word: FANTASTIC! The parmesean mixture is also good on other fish....we've had it on fresh salmon and tuna, because we can't get enough of it!!!

YUM! The whole family enjoyed these kickin' greens! Recipe turned out perfectly as written. If your greens seem dry, just add a bit more broth or water to the pot.

Taco Seasoning I

Since finding this recipe on AR, I have not (and will not) buy any sort of taco seasoning packet...the flavors of this seasoning mix are amazing! I think the hotness is just right, but the kids claim its a bit spicy. My suggestion, if you have young children or picky eaters, is to hold off on mixing in the hot spices until last. Then add it little by little to taste at the end.

Vegan Bean Taco Filling

Due to a recent switch to veganism, I am relying more and more on beans to create filling meals. This taco filling is delicious, super flavor packed, and simple to make, you'll never miss meat tacos! My non-vegan roommates keep finishing off batch after batch!

World's Best Lasagna

I have made this on 4 different occasions, and its always a hit. I suggest making a double batch of sauce and storing it in the freezer, because everyone will want to have it again!
