Spanish Moroccan Fish

My new favourite fish recipe. Must use fresh parsley and you definitely don't need 5lbs of fish. I used 1lb (5 filets) and it was perfect.

Quinoa, Beet, and Arugula Salad

This is my new favourite salad. I used balsamic instead of red wine vinegar ( I didn't have any red wine vinegar on hand) and also substituted feta for the goat cheese. Lastly, I used crispy onions instead of green onions. This salad is simply delicious!

Vegetable Rice Casserole

awesome side dish. It goes with almost anything and is so easy to make. This will be a new favourite in our house. I added a bit of feta in the middle layer and cheddar on top :)

I would only add 1/4 cup sauce because it is way too salty with 1/2 cup. Not the best of flavours. I will not be making these again.

Chicken and Pasta in a Mango Cream Sauce

With a few modifications, this recipe is amazing!!! I used coconut milk instead of cream, doubled the ginger and added some lemon grass. mmm mmm good!

Double Tomato Bruschetta

This was very delicious. I added shredded chicken to the tomato mix for some protein and had this for dinner with a salad. Fresh and healthy.

Ratatouille Fettuccine Alfredo

This recipe was very delicious. I would definitely recommend making your own alfredo sauce because the taste of the jarred sauce ruins the dish. I did not have any yellow squash so I used 2 zuchini's instead. Even my 2yr old liked this dish. Thank you for the recipe.

Coconut-Curry Lentil Stew Served over Quinoa

This is one of my new favorite recipes. I used jasmine rice instead of quinoa and I ground up shredded coconut in the blender because I did not have coconut powder. I also added 1 tsp of garam masala to the spice mix and used 1/2 tsp of ground cinnamon rather than the cinnamon stick. Thank you for sharing :)
