Ratatouille Fettuccine Alfredo

This recipe was very delicious. I would definitely recommend making your own alfredo sauce because the taste of the jarred sauce ruins the dish. I did not have any yellow squash so I used 2 zuchini's instead. Even my 2yr old liked this dish. Thank you for the recipe.

Coconut-Curry Lentil Stew Served over Quinoa

This is one of my new favorite recipes. I used jasmine rice instead of quinoa and I ground up shredded coconut in the blender because I did not have coconut powder. I also added 1 tsp of garam masala to the spice mix and used 1/2 tsp of ground cinnamon rather than the cinnamon stick. Thank you for sharing :)

Apple Cider Stew

This was the best stew that I've ever eaten. I did make a few changes but nothing major. First of all, I tossed the beef with flour and spices and then put in the slow cooker. I did not wait until beef was cooked before adding the juice mix to the beef. I added Worcestershire sauce, savory, more thyme, dried basil and 2 beef bouillon cubes to the cider before putting the juice in my crock pot. I let the broth and beef cook for 1 hour before adding my veggies. I used baby potatoes, sweet potato, brussel sprouts in addition to the ingredients in the recipe. I let this cook on high for another 3 hours and it came out AMAZING. I will be making this often. Thank you for the recipe.

Vegetarian Sweet and Sour Meatballs

I have a few vegetarian friends and I made this for one of their birthday parties. Even the non vegetarians didn't realize that these weren't made with meat. My vegetarian friends have since asked me to make these several times. Great recipe. Thank you.

Sweet and Sour Meatballs II

These were amazing. I brought them to 3 potlucks and got rave reviews each time. I cut the vinegar and brown sugar in half. I also added about 2 tbsp of pure Canadian Maple syrup as well as a few cloves of garlic to the sauce. Great recipe. Thank you

Spiced Butternut Squash Soup

I doubled this recipe since I had an 8lb squash. Instead of the potatoes added 2 red apples and 1 sweet potato. I added cinnamon to the spices. This soup was amazing!! I will definitely make again

This recipe is great!! I used red wine vinegar in the sauce and added 3 crushed garlic cloves. I made mini patties with the meat and fried them in the pan (rather than cook it for 2 hours in the oven). My husband loved it and I will definitely be making this again.
