Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Perfect. Even following my Betty Crocker cookbook, I couldn't get them right. Now I have a secret I can pass on to my girls.

This did not turn out as I hoped. I used homemade crab broth instead of chicken broth. i took one person's advice and mushed up the fish to make a thicker broth base. I cooked my mussels and clams first, waiting til they opened before putting in the crab, shrimp and scallops. However, the shells were blocking the crab, shrimp & scallops from getting to the broth. I used tongs and pulled out all the clams/mussels before putting in the other seafood. It was a very frustrating (and expensive) experience. I have 2 tupperwares of this stuff in the freezer and need to figure out how to convince my family to eat the left overs! Febuary 2011 I took the frozen left overs and added a can of tomatoes (i had only added 1 can before) and t cayenne pepper. Now it tastes better. I'd bring it up to 3 1/2 stars

Flank Steak Pinwheels

Lots of flavor! It was a bit frustrating trying to roll it up, I think my steak was only about a pound. Despite using a meat mallet to flatten, there wasn't as much to wrap around the yummy insides. I had to tie it was regular twine (how many of you really have kitchen twine?) The marinade really made a difference.

Whole Wheat Beer Bread

Scrumptious Salisbury Steak in Mushroom Gravy

This is good for what it is. I'm trying to get over my snobbery of ground beef dishes; however just don't enjoy meatloafy-style foods. DH liked it, reminds us of our childhoods. Kids ate it but don't love it.

Maple Apple Chicken Burgers

4 1/2 stars I'm surprised that I tried this. It's rare that I"d buy ground chicken. The burgers were good, even tho I didn't make the sauce (don't care for mayo or dijon) Instead it seemed to scream "Bacon!". I loved the apple, syrup, bacon combo. I'll make this again.

Marty's Loosemeat Sandwich

I've made this twice with mixed reviews. I cut down on the beer, as it takes forever to steam off. Kids want to know why the meat falls off the bun and my dh sez that hamburgers would be easier to handle. Taste was okay. I did notice that many people who rated it higher added spices...hmmm

I nuked the cubed potatoes to speed things along. Substitute clam broth for the water. Just right with a shake of chipotle in your bowl.

Pesto Cheesy Chicken Rolls

Good for a special meal, since it's a lot of work to trim, pound out, and roll. I used a lot of toothpicks to keep them together. I dipped mine in egg then dredged through crumbs.

Chicken and Broccoli Braid

Quite yummy. I messed up and bought biscuits in the can, but I pieced them together and made it work. Somehow I actually managed to braid it and it looked nice too. UPDATE: I have made this about a dozen times and it is always a hit. I never use red peppers (person preference) and steam the broccoli. Instead of straight salt, I add a Penzey's Fox Point.

Bok Choy Beef Soup

I needed to add more broth and water to make this stretch for my family of 4. It seemed like there was a lot of onion, and I knew there would be much complaining...so I scooped out the cooked onion and mushed it in the food processor. I let everyone add his/her own Sriracha. I had some anise pods in the cupboard and threw those in (I wanted that pho taste). That really helped. Thanks for the recipe, Becca.

Chipotle Crusted Pork Tenderloin

Tip..sear meat at a higher temp, then put on indirect heat. that seems to prevent burning. I needed to tone the Chipotle down a bit for the kids, but it had a pleasant nip along with the brown sugar sweet. I'll do this one again.

Pesto Sauce

Can't get enough of this! I increased the basil, as others have recommended. I used basil from my garden. I've used it as a spread for grilled chicken sandwiches and a pesto pizza w/tomatoes and mozzerella. But the pine nuts are so expensive!
