Marty's Loosemeat Sandwich

I've made this twice with mixed reviews. I cut down on the beer, as it takes forever to steam off. Kids want to know why the meat falls off the bun and my dh sez that hamburgers would be easier to handle. Taste was okay. I did notice that many people who rated it higher added spices...hmmm

New England Clam Chowder I

I nuked the cubed potatoes to speed things along. Substitute clam broth for the water. Just right with a shake of chipotle in your bowl.

Pesto Cheesy Chicken Rolls

Good for a special meal, since it's a lot of work to trim, pound out, and roll. I used a lot of toothpicks to keep them together. I dipped mine in egg then dredged through crumbs.

Chicken and Broccoli Braid

Quite yummy. I messed up and bought biscuits in the can, but I pieced them together and made it work. Somehow I actually managed to braid it and it looked nice too.

Bok Choy Beef Soup

I needed to add more broth and water to make this stretch for my family of 4. It seemed like there was a lot of onion, and I knew there would be much complaining...so I scooped out the cooked onion and mushed it in the food processor. I let everyone add his/her own Sriracha. I had some anise pods in the cupboard and threw those in (I wanted that pho taste). That really helped. Thanks for the recipe, Becca.

Chipotle Crusted Pork Tenderloin

Tip..sear meat at a higher temp, then put on indirect heat. that seems to prevent burning. I needed to tone the Chipotle down a bit for the kids, but it had a pleasant nip along with the brown sugar sweet. I'll do this one again.

Pesto Sauce

Can't get enough of this! I increased the basil, as others have recommended. I used basil from my garden. I've used it as a spread for grilled chicken sandwiches and a pesto pizza w/tomatoes and mozzerella. But the pine nuts are so expensive!

Dorsey's Fish & Oyster House Crab Cakes

Used all ingredients, but drastically cut back on the oil. I've always used a recipe that has breadcrumbs, so using biscuit mix was a new twist. They turned out very good. Thanks, Dorsey.

Southern Pulled Pork

Flavor was nice. I was concerned about the meat being too greasy if I returned it to the pot with all the liquid, so I drained it out. This of course, made it a little dry. It just seems like the pork would be swimming in liquidy fat. Any suggestions?

Serbian Cevapcici

Yummy! And I don't even know how to pronouce it! I was concerned that the cayene pepper would be too much for the kids, but they didn't say a thing. I also was wondering if I'd like it since I never cook lamb. But surprise...I'll make these again for sure. I'm sure someone of Serbian decent would like to shoot me for saying this, but I think of these as Serbian gyros.

Fish Chowder

A good way to use leftover cooked fish. But this definitely needs more spices. I had fresh parsley on hand and a few shakes of Lawry's season salt. And I only added 1 can of milk. Why does it have to be evaporated, can't regular milk do the trick? My kids only ate one ladle full each. So my husband has 4 tupperwares for lunchtime leftovers

Savory Grilled Potatoes

Double the spices, add extra ones too (Mrs Dash). I cut back on the mayo and added olive oil. Make sure the potatoes aren't piled up for even browning. Now that I think I have a handle on cooking it, I'll try it again.

Creamed Eggs on Toast

Eggs Goldenrod. I skipped chicken boullion (it's made of yucky stuff), but added 2 slices of cheese into the melting mix and a shake of garlic and/or onion powder. I used toasted english muffins and spooned the eggwhite mix onto the muffins, topped with the crushed egg yolks. Sprinkle with paprika. Voila.!
