Hungarian Mushroom Soup

Really enjoyed this. FYI ..The recipe doesn't make enough for 6 unless they are small portions.UPDATE and TIP: I put the onions in the food chopper and sauteed for longer than 5 minutes. Making them really soft helps with the texture.

Strawberry Pretzel Salad

Reduced amount of water by 1/2 cup after reading stories about it being runny. Cooled the pretzel layer, than firmed the cool whip layer prior to jelly/berries. Hubby said it was a bit difficult to remove pieces from the glass pyrex. Unsure why. Big hit at a get together.

Baked Fried Eggplant

This was crispy but required 2 T of o.o. on a foil lined pan and a liberal spraying of the tops of the eggplant. Like another reviewer, I used a mix of mayo and egg for dipping and I added 1/2 t of cayenne, salt & pepper, and extra italian seasonings into the crumbs. Finished with sprinkling of italian cheese and sides of marinara and spaghetti. With those changes, this recipe would be to 4 stars.

Appetizer Mussels

This is replacing my Mussels Diablo recipe. That being said, cooks might want to note that tomato/clam cocktail juice is made with high fructose corn syrup and msg. I didn't realize this until husband came back from the grocery store with the ingredients. Thank goodness I had V8 and clam juice in the pantry. I made that substitution. Rave reviews from my dinner guest. We served this over angel hair pasta and increased the amounts to serve 5 as a meal. My oldest daughter ate 3 helpings.

Scott's Coast-to-Coast Famous Chicken Wings

TIP: It takes a lo-oong time to heat one gallon of oil to 375. Factor this into your cooking time! The results were quite tasty. They didn't turn out as crispy as when I get them at restaurants tho. Also, peanut oil is pretty expensive and I saved the oil to use again. The second time I made these, I decreased the amount of butter in the sauce. These are wings for folks serious about making them authentically.

Frijoles a la Charra

Recipe as-is tastes a little bland. I've made this twice now. The second trial I ended up adding Penzy's "Arizona Dreaming" plus cumin and chili powder. That did the trick for our family. Do yourself a favor and only add beer you enjoy drinking, since it really stands out in this dish.

Steak and Spinach Salad

Use another kind of steak! The salad mix was good, but something like grilled flank would taste sooo much better. Round steak (I marinated for 24 hours) was still tough. Like others, I used a raspberry vinegarette for dressing. I agree blue, gorgonzola or even feta would finish this salad. I'll make it again with a different cut of meat.

Chris' Chili

Despite my inner cook urging me to add garlic, onions or peppers, I followed the directions. I chose this mild-mannered recipe since it would be eaten by toddlers thru adults. My first taste of this brought to mind the word 'smooth'. I set a shakers of chipotle and hot peppers on the side and offered condiments of cilantro, shredded cheddar, and chopped onions for those was wanted to jazz it up. It wasn't tomato-y or spicy, just easy to eat and well received. Great chili for those who don't like things other than meat and beans in their chili.

Roasted Beets and Sauteed Beet Greens

I was trying to get out of the family veggie rut of salad, broc or cauliflower. I used baby beets. Liked the greens and the vinegar too. I'm still not a huge beet fan, but it was a nice change.

Chili Chocolate Cookies

I really wanted to be wowed with all these interesting ingredients. I even made a trip to the liqueur store to get Kahlua. I didn't have currents, but used minced prune. These were good, but not to-die-for. I might try baking them less (I took mine out at 12 minutes) to make them more chewy. The current photo doesn't match the brown cookie btw.

Holiday Wreaths

Great gobs of green glue! Okay, having made rice crispy treats, I should have known what I was in for. But forming it into circles and trying to get the red hots to stick cranked up the difficulty factor. The only thing that saved me was greasing my finger tips between spoonfuls. They are festive looking. Not a cookie for amateurs to make.

Spiced Butternut Squash Soup

Double the spices and don't skip the sherry. That really gives it a punch. I omitted one potato and put in 1/2 cup each of celery and carrot. One daughter asked if she could not finish her serving. But she doesn't like sweet potatoes either and this is pretty close. The others liked this and I've made it twice. I have used canned (2 cans) pureed squash to save time.

Chicken Wing Dip

Like others, I use blue cheese dressing. Closer to the real deal. Big hit. Shred chicken, it takes a bit more time, but hey, this is an easy recipe anyway.

Green Beans with Cherry Tomatoes

Very good w/the following changes. Substitute bacon fat for butter, no sugar but a bit of balsamic, real garlic and a shake of salt rather than garlic salt. Tolerated even by my non-green bean lovers. 6/17/12 Made recipe as is...and it is good too.

Carne en su Jugo (Meat in its Juices)

The flavor was great. I was worried with 3 cayenne peppers that it would be too spicy. But I could have added more. It was hardly noticeable. I agree that a cheaper cut of meat could have been used and definitely simmer this for a long time (crockpot!) to tenderize the meat. A great way to use tomatillos.

Baked Potato Soup V

This was too thick. Taste is good and its a straight forward recipe. Skipped the sour cream (not a fan) and added half 2% milk and half chicken broth. It still needs extra liquid when reheating or it becomes mashed potatoes.

Authentic tasting. It is an acquired taste. I think saying this feeds only 6 people is a low estimate. Picky kids only ate a few teaspoons.
