Meatball Nirvana

I having been using this recipe (with the alteration of 1/2 pork and 1/2 beef) for a while. My family loves these covered in blueberry jelly w/a touch of allspice. I know it sounds weird, but give it a try when you want something other than the usual pasta sauce route!

House Fried Rice

Don't saute with sesame oil. Use veg oil and add a bit of sesame oil into the rice mix for flavor. Like other reviewers advised, use cold rice.

Baked Kale Chips

Cannot even believe that I like these...but I do. Very light in your mouth. Don't move away from the oven after 8 minutes or you might get burnt kale! The very hesitant kids ate up the whole pan. I also served these to teenagers at a sleepover. After eyerolling from my daughter, and tentative nibbles from the other girls, they finished the bowl.

Roasted Apples and Brussels Sprouts

I had high hopes for this combination. The apples and onions were good but the b sprouts were mushy. I only made half the recipe...good thing since no one cared for it.

Slow Cooker Chicken and Dumplings

True comfort food made simple. If you have the time, add a few other ingredients...chopped celery, minced garlic and thyme. Forget the water...use chicken broth. I fork shedded the chicken 1 hour before serving and put the biscuits on top then to get the edges of the biscuits browned. My chicken-hating kid ate 2 servings!

Taqueria Style Tacos - Carne Asada

I marinaded our steak for 8 hours and grilled the meat. We all agreed it was flavorful. I didn't have enough time to make the relish, but used fresh salsa from the store. Thanks for the recipe.

Beer Batter

This is fast to make but it totally needs salt. At least 1/2 t. It was light and crispy but lacking flavor. I used it on rock fish we caught and dh and I both went and got different bottles of sauces for dipping to perk it up. Will probably try again w/that change. For Krystal, who said the batter came off...I've made the mistake of not drying off fish/chicken before adding a coating or not having the oil hot enough. It really helps.

Buffalo Blue Cheese Chicken Burgers

Working w/ground chicken is a pain! As others suggested, I put the cheese inside the chicken. I brushed o.o. on the burgers by they still stuck to the grates..arg! I saved half the sauce to brush on after grilling. Taste is good, but this would be easier to grill a breast and add cheese and sauce after cooking.

Chef John's Beans and Greens

We all liked this. I had turnip greens and no anchovies, but I will definitely make this again when I have anchovies. Oct 2013 Second time making, this time using anchovy paste and escarole. I dunno about the rest of you, but it was a quest to find this veggie. I made as stated. After tasting I think more lemon peel and red pepper is in order.

Red Chard and Caramelized Onions

A welcome change from the usual things people do with greens (bacon/vinegar). No one likes kalamata, so we skipped those. Enjoyed the salty capers with the sweetness of the sugared onions.

Strawberry Pretzel Salad

Reduced amount of water by 1/2 cup after reading stories about it being runny. Cooled the pretzel layer, than firmed the cool whip layer prior to jelly/berries. Hubby said it was a bit difficult to remove pieces from the glass pyrex. Unsure why. Big hit at a get together.

Baked Fried Eggplant

This was crispy but required 2 T of o.o. on a foil lined pan and a liberal spraying of the tops of the eggplant. Like another reviewer, I used a mix of mayo and egg for dipping and I added 1/2 t of cayenne, salt & pepper, and extra italian seasonings into the crumbs. Finished with sprinkling of italian cheese and sides of marinara and spaghetti. Without those changes, this recipe wouldn't have come close to 4 stars.

Appetizer Mussels

This is replacing my Mussels Diablo recipe. That being said, cooks might want to note that tomato/clam cocktail juice is made with high fructose corn syrup and msg. I didn't realize this until husband came back from the grocery store with the ingredients. Thank goodness I had V8 and clam juice in the pantry. I made that substitution. Rave reviews from my dinner guest. We served this over angel hair pasta and increased the amounts to serve 5 as a meal. My oldest daughter ate 3 helpings.

Scott's Coast-to-Coast Famous Chicken Wings

TIP: It takes a lo-oong time to heat one gallon of oil to 375. Factor this into your cooking time! The results were quite tasty. They didn't turn out as crispy as when I get them at restaurants tho. Also, peanut oil is pretty expensive and I saved the oil to use again. The second time I made these, I decreased the amount of butter in the sauce. These are wings for folks serious about making them authentically.
