Cream of Fresh Asparagus Soup II

When I served this, I was worried it would be too bland. I was pleasantly surprised that I didn't need to dip into the container of parmesan cheese I had put on the table. My most sceptical family member finished her bowl. Be warned, this recipe doesn't make a lot. Next time I might add a small clove of garlic, but nothing to overpower the asparagus.

Creamy Au Gratin Potatoes

Lovely classic recipe. I use a garlic/herb salt instead of regular salt and sprinkle with parsley to add color and interest to this recipe. I finish by broiling for that yummy browning cheese look.

Jay's Jerk Chicken

Making the marinade was a bit tedious and I was excited with the interesting mix of spices and jalepeno. I hoped it was worth it. Alas, it wasn't a hit with my family and the leftover chicken sat for days is the fridge until I begged my husband to take it for a lunch.

Spicy Bok Choy in Garlic Sauce

Don't overcook this dish. The bok choy should have lots of snap. The flavor is a good compliment to an asian dish that is heavy on meat.

Marinated Pretzels

These were a big hit with a large group of teens. I doubled the recipe, using grapeseed oil, as it doesn't have a distinctive taste to distract from all the spices. I put them in a 2 gallon bag to marinate. They were best right out of the oven. But a word of warning...be attentive..some of mine burned.

Authentic Pad Thai

I didn't realize that authentic pad thai is actually quite boring without all the fixin's we add in. The flavor of the sauce is spot on, but I had to make a trip to the Asian store in town to find tamarind. My though to make it more of a complete meal rather than just noodles, peanuts, eggs and chicken, is to stirfry some veggies (I used pea shoots from the Asian store, but bok choy, spinach or something that really cooks down works) and other meats (shrimp or pork) ahead of time and add them to your dish. Will make again (hey I have a bunch of tamarind paste to use up!) with more veggies. Dec 2, 2014 Used this recipe again, this time using tamarind concentrate; there was no such thing as 'tamarind paste'. There was a lot of it, but I used it all since I dislike dry pad thai. I continue to add veggies to make more of a complete meal and less authentic. We really like this version.

Homemade Enchilada Sauce

This was easy. A bit sweet. Very much liked by the kid who finds the canned versions too spicy. A bit sedate for spice lovers. Second time making....my sister gave me a hatch chile chocolate bar, so I skipped the brown sugar and added a bit of the chocolate. Something worth trying, folks. Think I'll still try upping the spices next time.

Cream of Asparagus Soup I

I made as directed (decreasing the bouillon amount). Other asparagus soup recipes included lemon, so my only real change was to substitute lemon pepper for the 2 peppers. We thought it was good but not necessarily a soup I'd dream about. I think it can be better. Will probably attempt again and make modifications to increase the 'Wow' factor.

Best Brownies

5 stars if you just make the brownies, but 3 stars for the frosting recipe. My daughter made these on her own and was baffled when trying to stir 'softened' butter with the other ingredients to make a creamy frosting. Helloo! The butter needs to be melted. We made it work by adding milk to get a spreadable consistency. The brownies were thin, chewy and densely delectable. Yum.

Absolutely The Best Shrimp Scampi

Breaded shrimp scampi is a new twist for me. The family liked it (I added Parmesan prior to broiling) but wished for more sauce. I don't keep brandy on hand so I doubled the wine. So maybe next time I'd add butter and a squeeze of lemon. Will probably make this recipe again, altho the breading part adds time.UPDATE: April 2015 This recipe takes more time then most others, but the result is worth it. I added 1/2 stick of butter and then tossed the shrimp with pasta. A squeeze of lemon on top is the finishing touch.

Spicy Indian Dahl

So surprised that we all liked this. I've never cooked lentils or made Indian food before. The consistency of this would have been WAY to thick to be considered a soup. I used at least 2 cups of chicken broth and put some of the mix into a blender to use as a main-meal dip for Naan. I was hesitant about the overload of onions and used 2 large onions. I was shocked that it wasn't really flavorful and will probably add more or other spices next time.

Baked Buffalo Chicken Dip

Liked by most adults, despised by most teenagers! I brought some to an adult Superbowl party and served with celery and Chicken n Biscuit crackers and it was well received. Brought the same dish to a high school event and it was out and out rejected. Eew...blue cheese. Be aware of your audience folks. A bag of Doritos would have gone over better.

Absolutely Ultimate Potato Soup

This was quite bland. I know potato soup is not very exciting but...Toppings of bacon bits green onions and green onions improved it but I felt compelled to add penzey's fox point seasoning to help it.

Potato and Chorizo Mini Quiches

Disappointing. I followed the recipe using soy chorizo (shame on me, but that's what the snooty upscale grocery store with initials WF carried). I wasn't very competent on doing the ol' shake-a-shake-a (see video) and had egg flowing over the muffin cups. I result rated "their ok" by the family. Maybe real meat gets different results.
