Authentic Pad Thai

I didn't realize that authentic pad thai is actually quite boring without all the fixin's we add in. The flavor of the sauce is spot on, but I had to make a trip to the Asian store in town to find tamarind. My though to make it more of a complete meal rather than just noodles, peanuts, eggs and chicken, is to stirfry some veggies (I used pea shoots from the Asian store, but bok choy, spinach or something that really cooks down works) and other meats (shrimp or pork) ahead of time and add them to your dish. Will make again (hey I have a bunch of tamarind paste to use up!) with more veggies.

Homemade Enchilada Sauce

This was easy. A bit sweet. Very much liked by the kid who finds the canned versions too spicy. A bit sedate for spice lovers. Second time making....my sister gave me a hatch chile chocolate bar, so I skipped the brown sugar and added a bit of the chocolate. Something worth trying, folks. Think I'll still try upping the spices next time.

Cream of Asparagus Soup I

I made as directed (decreasing the bouillon amount). Other asparagus soup recipes included lemon, so my only real change was to substitute lemon pepper for the 2 peppers. We thought it was good but not necessarily a soup I'd dream about. I think it can be better. Will probably attempt again and make modifications to increase the 'Wow' factor.

Best Brownies

5 stars if you just make the brownies, but 3 stars for the frosting recipe. My daughter made these on her own and was baffled when trying to stir 'softened' butter with the other ingredients to make a creamy frosting. Helloo! The butter needs to be melted. We made it work by adding milk to get a spreadable consistency. The brownies were thin, chewy and densely delectable. Yum.

Absolutely The Best Shrimp Scampi

Breaded shrimp scampi is a new twist for me. The family liked it (I added Parmesan prior to broiling) but wished for more sauce. I don't keep brandy on hand so I doubled the wine. So maybe next time I'd add butter and a squeeze of lemon. Will probably make this recipe again, altho the breading part adds time.

Spicy Indian Dahl

So surprised that we all liked this. I've never cooked lentils or made Indian food before. The consistency of this would have been WAY to thick to be considered a soup. I used at least 2 cups of chicken broth and put some of the mix into a blender to use as a main-meal dip for Naan. I was hesitant about the overload of onions and used 2 large onions. I was shocked that it wasn't really flavorful and will probably add more or other spices next time.

Garlic Chicken

Baked Buffalo Chicken Dip

Liked by most adults, despised by most teenagers! I brought some to an adult Superbowl party and served with celery and Chicken n Biscuit crackers and it was well received. Brought the same dish to a high school event and it was out and out rejected. Eew...blue cheese. Be aware of your audience folks. A bag of Doritos would have gone over better.

Absolutely Ultimate Potato Soup

This was quite bland. I know potato soup is not very exciting but...Toppings of bacon bits green onions and green onions improved it but I felt compelled to add penzey's fox point seasoning to help it.

Potato and Chorizo Mini Quiches

Disappointing. I followed the recipe using soy chorizo (shame on me, but that's what the snooty upscale grocery store with initials WF carried). I wasn't very competent on doing the ol' shake-a-shake-a (see video) and had egg flowing over the muffin cups. I result rated "their ok" by the family. Maybe real meat gets different results.

Ciabatta Bread

This is my first attempt at ciabatta and it went well. I had to baste the bread with water as I don't have a spritzer. The taste was great. I think it is worth the work if you have the time.

Mama's Best Broiled Tomato Sandwich

4 1/2 stars. We loved the taste but found ourselves pulling the tomato skins off the slices as we ate these yummy sandwiches. Even better with a sprinkling of garlic in the mayo. I must say I was light with the amount of mayo and heavy handed with the Parmesan cheese on top. I like how the mayo melted into the toasted bread like butter when I spread it on, as I am not a huge mayo fan. I shared this recipe with my mom, who managed to serve it to my mayonaise-hating dad without him noticing.

Sauteed Swiss Chard with Parmesan Cheese

Cilantro-Lime Dressing

I was hesitant to use all the listed ingredients (jalapeno and ginger) because I was worried it would be a clash of strong flavors. But I made it as the recipe instructed... maybe the honey mellowed them out. I was flavor packed but not spicy. This was awesome on a chicken salad. Thanks for the recipe!

Slow Cooker Buffalo Chicken Sandwiches

This is 5 stars if you used thighs instead of breasts. I've made it both ways and the former is better. Also, shred then return to crockpot for at least 30 minutes seems to really infuse the sauce. I thought this would be really spicy with so much hot sauce, but maybe the salad dressing mix mellows it a bit.

Extreme Chocolate Cake

Soooo good! My kids and I made this 3 times in one month for different occasions (we didn't eat all of it, we shared). I also substituted coffee instead of milk in the frosting. Very moist, very dense, very decadent. Our go-to chocolate cake.

Slider-Style Mini Burgers
