I love growing things to eat. But having a garden is like having a pet. When I've harvested something that I've tended patiently it feels like such a success.
My favorite things to cook
I love it when I make something up and it actually tastes good! But sometimes, I can't remember how to repeat creating a dish.
My favorite family cooking traditions
My heritage is mostly meat and potatoes. So it's taken me a while to get to know and enjoy cook seafood or using exotic spices veggies. Most of it has been trial and error. I try to not let my kids know that most of the things I serve them, I would have never eaten as a kid!
My cooking triumphs
All the birthday cakes I've made for the kids. I can't believe they come out as good as they do...my husband usually swoops in the lends a hand when I'm at a breaking point.
My cooking tragedies
I attempted to display my newlywed cooking skills to an old high school girlfriend who was visiting from out of state. I made blackened steak but ended up smoking up the apartment and setting off the smoke alarm. There was so much spicy smoke in the air, that our eyes were watering.

Strawberry Pretzel Salad
Reduced amount of water by 1/2 cup after reading stories about it being runny. Cooled the pretzel layer, than firmed the cool whip layer prior to jelly/berries. Hubby said it was a bit difficult to remove pieces from the glass pyrex. Unsure why. Big hit at a get together.

Baked Fried Eggplant
This was crispy but required 2 T of o.o. on a foil lined pan and a liberal spraying of the tops of the eggplant. Like another reviewer, I used a mix of mayo and egg for dipping and I added 1/2 t of cayenne, salt & pepper, and extra italian seasonings into the crumbs. Finished with sprinkling of italian cheese and sides of marinara and spaghetti. Without those changes, this recipe wouldn't have come close to 4 stars.

Strawberry Spinach Salad II
The whole family enjoyed the combination of flavors. This is a nice change from the usual salad line-up.
