Carrot Cake III

Reviewed: Oct. 28, 2012
I made this recipe into cupcakes and LOVED it! Even my husband who doesn't like carrot cake ate a ton of them and raved about it! I split the sugar into white and brown (half each), increased the cinnamon a bit, added a bit of nutmeg, used walnuts instead of pecans, used coconut oil instead of vegetable oil (healthier), and halved the baking powder and baking soda (based on other reviews). Also, when I mixed all the ingredients the batter looked incredibly thick, so i added a cup of yogurt and a few drops of milk. The result was amazing, moist carrot cake. Thank you for this recipe... will definitely make it again!

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Jan. 16, 2012
I made this dish last night and it turned out fantastic! A few minor changes though: First I diced the chicken, then I browned it in olive oil with some salt, pepper, turmeric, onion powder, basil and paprika added for flavor. I also added 1-2 cloves of garlic to the chicken a couple of mins before taking it off the heat. For the tomatoes I added some basil as well as as half a diced yellow bell pepper as well (any other color pepper will do too), then served the whole thing over buttered angel hair pasta. These little changes made a big difference for flavor and everyone loved it! Will definitely make it again.

Country Apple Dumplings

Reviewed: Oct. 25, 2010
So easy and delicious!! I only used 1/2 cup unsalted butter and 1 cup sugar, and about 10 oz Mountain Dew. Also I made some with apples and some with blackberries. 35 minutes later, everyone was raving!! Next time I will use a bit less sugar as the dumplings were a tad bit too sweet. Still very yummy and simple... perfect for having company!

German Baby

Reviewed: Oct. 24, 2010
I followed the other reviews and this recipe turned out fantastic!! I didn't warm up the milk & eggs, but warmed up the dish before melting the butter in it. I also added a bit of vanilla extract, powdered sugar and sprinkled some nutmeg and cinnamon on top before baking at 400 degrees for 20 minutes. Golden, fluffy and yummy. LOVE IT!!!

Reviewed: Mar. 4, 2010
All I can say is YUMM!!!! This recipe was fantastic and the lamb chops turned out so good I couldn't believe it! I was out of balsamic vinegar so I made them with white wine vinegar a bit of added sugar, and they turned out perfect. BRAVO!

Sukhothai Pad Thai

Reviewed: Feb. 7, 2010
This is a simple and great recipe for delicious homemade pad thai! Other reviewers suggested using fish sauce instead of soy sauce but I couldn't find any fish sauce at the supermarket so I stuck to the soy sauce and it came out yummy! I used half the amount of white wine and substituted lime juice for the other half. Also I used chili powder instead of paprika to add a good amount of spice. Next time I will skip the sugar the recipe calls for at the end... it's not necessary. Overall I loved this recipe and will definitely make it again!

Jamie's Cranberry Spinach Salad

Reviewed: Feb. 7, 2010
This salad is SO easy to make and SO good. It's one of those salads that impresses everyone and makes them wonder how you made it and what you put in it. I make it all the time now with either spinach or mixed greens. Fabulous!!

Spanish Flan

Reviewed: Dec. 15, 2009
This is a great and very simple recipe for traditional flan. Absolutely LOVED it! Flan is my favorite dessert and now that I know it's so easy to make, I'm going to make it all the time!! Just like some of the other reviewers have mentioned, heat up the pyrex dish while mixing the ingredients so the melted sugar doesn't harden when you pour it. Enjoy :)

Lubia Polo (Green Bean Rice)

Reviewed: Aug. 19, 2009
This is a great recipe for an easy and delicious Persian meal. My only suggestions for making this more authentic and closer to the original recipe: Skip the jalapeno peppers, replace the curry with turmeric, and add saffron too.
