I made this recipe into cupcakes and LOVED it! Even my husband who doesn't like carrot cake ate a ton of them and raved about it! I split the sugar into white and brown (half each), increased the cinnamon a bit, added a bit of nutmeg, used walnuts instead of pecans, used coconut oil instead of vegetable oil (healthier), and halved the baking powder and baking soda (based on other reviews). Also, when I mixed all the ingredients the batter looked incredibly thick, so i added a cup of yogurt and a few drops of milk. The result was amazing, moist carrot cake. Thank you for this recipe... will definitely make it again!
