Tomato, Cucumber and Red Onion Salad with Mint

Excellent salad for a change of pace! Very tangy sweet/sour dressing makes a great side dish for any entree. My husband gets kind of tired of the "tomato" salads as my garden overfloweth! He loved this fresh and spicy alternative! Fixed it exactly as posted!

Absolutely Awesome BBQ Sauce

Couldn't get my usual sauce at the store so I tried this recipe. Got raves! I was afraid it would be too sweet but it had the right combination of sweet and spicy. I didn't have any chili saice so I used Beaver Cocktail Sauce and I added smoked paprika and chili powder. YUMMY!

Absolutely Awesome BBQ Sauce

Spicy Chicken Quesadillas

This is a really good recipe that you can use "as is" or spice it up a bit. It's easy, quick and delicious! I chopped a fresh jalapeno, cilantro and the onion and sauteed a bit before adding the chicken and cheese. I will definitley add this to my recipe file!

Pork Medallions

I stuck to the recipe except substituted a little on the spices. This was a really great recipe! Quick and easy with flavor that says you spent a lot of time and effort on it! It would be a great company dinner with polenta or mashed potatoes.

Mom's Zucchini Bread

I followed this to the letter but somehow ended up with more of a dough than a batter. Added a 1/4 cup water just to be able to mix the zuchinni and walnuts in. The result was good, moist but a little too sweet. I think next time I will add dried cranberries and use less sugar.

Miracle Baking Powder Pie Crust

This was an excellent tasting crust with good tender texture. It was easy to assemble. I did not find it that easy to handle and my lattice crust came out "not quite so pretty" but it was very tasty! I also used 1/2 butter for the shortening. Very yummy!

Roasted Asparagus with Balsamic Vinegar

Perfectly simple and delicious! I added garlic and used coarse salt crystals and also added the vinegar before putting in the oven.(A mistake that worked out well!) Transferred to a serving platter and then poured the pan juices over. Great!

Jalapeno Popper Wontons

I thought this was one of the simplest appetizers I've made but packed a punch!! I used fresh jalapenos and brushed with walnut oil, baked at 425 for about 5 minutes. Didn't have the chili sauce so I melted some jalapeno jelly and added chopped garlic to it for the dipping sauce. Very good!! Thanks!

Ghirardelli® Individual Chocolate Lava Cakes

My daughter requested "anything chocolate" for her birthday dinner. I made these cakes and they were a big hit! They are "everything chocolate"!! Followed the recipe except I didn't have the 60% chocolate, used 54%. Doubled the recipe and used large muffin tins. Made ahead of time and refrigerated until ready to bake. Easy and delicious! What more?

Pork Chops to Live For

I love this recipe! I did try to lighten it up a bit and keep the same flavor. I used water for a portion of the milk and did not dip in egg before dusting with flour. I also added a bit of dry white wine for part of the liquid. I used an electric skillet which cut the cooking time but it still came out tender and delicious! I also tried this with chicken thighs! Great!

Apple Crumb Pie

I fixed this exactly as posted and it was very tasty. My filling seemed way to liquidy but that could have been due to the fact that I used frozen apples (thawed). That made the bottom crust soggy and it was more like a crisp with a crust. But good!

Tuna Rice Puff

I was a little disappointed in this recipe. My family thought it was "just okay". Rather bland. It's a good idea that's looking for some kick! I may try it again but will add some spices and some peas, a touch of hot sauce? It just needs something more.......

Sour Cream Pork Chops

Loved this recipe!! Can't believe the flavor that is achieved with such simple ingredients. The sauce is to die for!! Followed the recipe except I was short on time so I cooked it in my cast iron casserole in the oven. 250 for 3 1/2 hrs. 200 for 1 hour. Got raves!!

Cold-Pickled Green Beans

I loved the idea of "not hot canning"! I did find that mine turned out a little "bland" for our taste. I didn't have tarragon vinegar and used cider with fresh tarragon instead so maybe that could be why. I re-worked them a bit, added wine vinegar,some sea salt, sugar and a few more spices; then heated the vinegar mixture just until things disolved nicely. I increased the ratio of vinegar to water. For our taste, that was better. It's such an easy recipe that you can quickly make changes to suit your own taste!
