About this Cook
I am happily married and have just my husband and I to cook for. We move around a bit due to his job so I try to perfect something from each place. I learned the basics of seafood in Seattle, perfected my biscuits and comfort food in North Carolina and am now trying to get a hold of German cooking. I got the schnitzel down but I can't seem to get the desserts!
My favorite things to cook
I love cooking all things dessert. I don't think I've run into many soup recipes I didn't like. And besides that I'd have to say anything that my husband enjoys. He likes my chicken enchiladas, rice and beans most. He knows he's got me in a good mood when he gets that for dinner!
My favorite family cooking traditions
I was raised on tex-mex. I never really thought I was any good as a cook when I first married. I thought that it was just my husband being nice. It wasn't until I had other people over that I realized that I actually did learn a thing or two growing up! I refused to learn how to make tamales growing up (long story, don't ask LOL) and then I went and married a man who loves them. Now that's one of the things I'm trying to perfect.
My cooking triumphs
My first Thanksgiving all by myself after 3 years married. Before that I had dodged the bullet by making sure to get invited over to a friends house! LOL Once it was done though it was OK. I think I was just hyping myself up too much.
My cooking tragedies
Baking my first cake without my mom when I was in the 5th or 6th grade. My best friend and I accidentally got the sugar and salt mixed up. Not Good! But then again who has containers of salt that big! LOL

Chocolate Ganache
This recipe was perfect for my needs! I halved the recipe and whipped it to frosting for my parisian macarons. I found that it was easier to freeze my chocolate and just used a grater over my scale to get the correct measurement. So simple! I don't know about people claiming that its bitter but I made sure to use a 60% bar. It worked for me. Thank you!

Wine Marinade
This is a regular in our house. The only change I made was to flip the soy sauce and wine measurements.

Homemade Flour Tortillas
Wonderful recipe! I was raised in Texas and had home made tortillas (thanks mom!) all of the time by using White Wing Flour. That's a "just add water" mix. When we were stationed in Germany the commissary didn't carry it so I had to make due with what was around. Lots of trial and error, calling home to grandmothers and aunts to figure out what "until it looks right" meant and the horrible outcome of Quaker Oats flour. Yuck. I've been through quite a few recipes over the years but once I found this one I was able to stop looking. I use butter or lard interchangeably. Simple, easy to make in big batches and they freeze beautifully! Spread them out on the counter on a dish towel, rotating until they're cool, then put a meals worth in a gallon size freezer bag. Do not bag them when they're still warm, they'll stick together! To heat them up just put them on the grill like normal. Perfect!
