I think a lot of the unhappiness in the reviews could have been avoided by clearly stating how many "average" people this menu expects to feed. Also, the highlighted Bean & Corn Salad on Monday looks like a very weak dinner - until you read the notes and see that chicken tacos are really the main dish, and a side of spanish rice is also planned. Calling for "leftover chicken" so often is a little unappealing, but it's not really leftover - it's a whole second chicken that you happened to have cooked earlier in the week so that you will have "cooked chicken" when you need it. Changing that one word could make a big difference in appeal.
I do agree that the ham soup and pear salad don't look like filling meals to me. Maybe both on the same night... Or with a LOT of chicken with the salad. and some cold cuts to pair with the soup. They'd be great lunches, though.
And I can't believe that we're supposed to roast two chickens, AND have a soup meal, and we don't use the chicken bones to make soup. If you have a crock pot, then it's easily accommodated into a working schedule.
I also wish there were a cost breakdown available so that I could judge whether these recipes are likely to be cost effective at my local store. I'm guessing that those who think that $100 is an outrageous budget will be able to shrink the cost of this menu as well.
