English Royalty Chocolate Chip Scones

I am so pleased how these turned out! I never knew how easy it is to make scones. I used 8 TB OJ, a few tablespoons less sugar, extra chocolate chips, dash of cinnamon and dash of nutmeg. I didn't need to use extra butter, the dough was crumbly enough with the amount stated in recipe. I can't wait to try this recipe with blueberries next! Try it, you will not regret it.

Broccoli Cheese Soup V

Delicious! I made 2/3 the recipe and used only 8 oz velveeta and 2 oz cheddar. Used one package chopped frozen broccoli and one package frozen broccoli florets. Also added one carrot cut into coins and and one large potato cubed. These two items were added to the boiling broth. Seasoned with black pepper, cayenne pepper. Also added crushed garlic into the broth. Used low sodium chicken broth.

Outrageous Warm Chicken Nacho Dip

Very good! I also used it as an enchilada filling for tortillas and enchilada sauce. Used 8 oz of Velveeta and 4 oz of cheddar cheese. Forgot to buy the jalepenos and it was still good.

Double Layer Pumpkin Cheesecake

Fantastic! Superb! Their aren't enough positive adjectives to describe this lovely pumpkin cheesecake. I used some of the modifications listed, 1/2 cup of sour cream after adding the eggs. 1 cup pumpkin pie filling. Since we used already spiced pumpkin pie filling no need for extra spice (added a dash of extra cinnamon anyways). A dash of extra vanilla extract. We used about half of the mixture for the first later to create a more defined layer. Also used a 10 inch graham cracker crust (bigger cheesecake and it all fit!) Took at hour to bake two of them side by side. Must do the water bath to avoid cracking. Refrigeration (preferably overnight) is a must before serving. Topped with frozen whipped topping. Everyone was impressed. So good, thank you for sharing this is a winner!

Tomato Soup I

We loved this creamy tomato soup! As usual, I made a couple substitutions after reading the other reviews. I omitted the margarine and sugar. Added lots of dry basil, black pepper, about 4-6 cloves minced garlic and 5 tablespoons diced fresh yellow onion. We tempered the whipping cream with spoonfuls of soup so it didn't curdle and eventually added all of the whipping cream/mixed in soup to the remaining soup. I can't wait to try with milk or half and half for a healthier version. Thanks for this wonderful tomato soup recipe!

Creamy Chocolate Frosting

Absolutely delicious. I do not like the thick, overly sugary frostings they have on store cakes. This has real flavor and is light and airy. Substitutions: Used fat free milk instead of evaporated milk. Also used only 5 tablespoons of butter. Add in the milk slowly because you might not need it all, depending on what consistency you are looking for. Enough to thinly frost 24 cupcakes. I added mint extract to make chocolate mint frosting, fabulous! Will definitely think twice before buying store bought frosting again. This is 10x better. Thank you for sharing your recipe, Tracy!

Shrimp Fettuccine Alfredo

Simply delicious and fool proof (if you are diligent with the stirring!). Here are my modifications MUST DOUBLE dairy portion to have enough, can also decrease noodles. I am partial to lots of sauce with my pasta so I kept the pasta and sauce separate until ready to eat then combined per plate. Used one cup half and half, and one cup skim milk (my attempt to make it healthier). Added about 9 tbs of Parmesan cheese. Also added nutmeg, basil, oregano, chili powder, garlic powder, dried parsely, and black pepper. Must stir on low for a long time for it to thicken. I added about 3 tbs breadcrumbs to help the thickening process. Kept it to 1 tb butter. Let me tell you it was stupendous and I've never made Fettucine Alfredo before. I think adding the spices I listed below makes it way more flavorful, but possibly less authentic. It probably took me 30 minutes of stirring for it to thicken, probably took longer because of the skim milk involved. Breadcrumbs really helped (I didn't have constarch).

Feta Chicken

Just made this and it's delicious! Used regular feta as that's what I had on hand. I added chopped kalamata olives, tomatoes, basil, garlic powder and a little olive oil to the feta filling. And as per other reviewers recommendation I coated the chicken in egg and then breaded the whole thing then added filling, spraying it will olive oil cooking spray prior to cooking. Used toothpicks to keep it closed. Added parmesan cheese, and cayenne pepper to the breadcrumbs. Wow, so good, thanks for sharing!

Greek Pasta Salad I

This recipe is fantastic, I've used it many times. I typically add a little less red wine vinegar, and add some balsamic vinegar. The most recent time I didn't use any meat, farfalle pasta, kalamata olives and red onion and it was still good. I agree with other reviewers that it definitely needs to be refrigerated overnight, as the flavors mix and it makes it that much better. Thanks for sharing!

Mexican Wedding Cookies

I just made these, they are sooo delicious! And easy to make! Like many other reviewers, I substituted confectioner's sugar for white sugar. I also added an extra smidge of vanilla and dipped the cookies in powdered sugar while they were warm, the sugar stuck better this way. I used almonds and chopped them coarsely in the food processor. They now have a delicate almond flavor. I also refrigerated my dough for about 2 and a half hours. I'm very impressed with this recipe, thanks for posting!

Taco Seasoning I

This recipe is great! I added extra cumin since I really like that flavor. I will never buy the taco seasoning packets again, if you already have all these spices on hand it is way cheaper to make it yourself. Thanks for posting!!
