Cream Cheese Frosting II

I did not have powdered sugar -- instead, I put 2 cups of sugar in the blender with 1.2 tsp. of cornstarch. I then added the remaining ingredients -- worked fine. Best cream cheese frosting ever!!

Banana Chocolate Chip Cake

Our new standard when we have overripe bananas! Did what others recommended: 1 cup sugar, 3 bananas, soda instead of powder, 1 cup chips and added a "glug" of vanilla. I never have to scrounge for a banana bread recipe again!

The Best Potato Salad

The perfect blend of creaminess and tang! I cooked the potatoes and the eggs together in the same pot. A real times saver. Didn't have the optional ingredients, but this dish was wonderful anyway. Will definitely add to the salad repertoire!

Cake Mix Cookies VIII

Moist, chocolatey cookie. I added 2 tsp. oil and 1 tsp. vanilla. This recipe yielded 32 cookies and took 14 minutes to bake. Quantity wise, I think the recipe would been more satisfying in cupcake form.

Four-Cheese Spinach Bake

I was looking for a low-carb casserole. Some changes: added some white pepper, grated nutmeg and doubled amount of spinach. I also added 2 ounces of parmesan on top and in mixture. It needed to bake for 1 hour, and filled an casserole dish. It also reheated very well. THE WHOLE FAMILY LIKED IT, which is nothing short of MIRACULOUS!! Thanks for a yummy dish.

Chilled Strawberry Soup

Delicious and refreshing, even though I had to low-carb it by using Splenda and Carb Countdown instead of sugar and milk, respectively. Will definitely make again. Yum!

Mom's Italian Beef Barley Soup

Rosemary Braised Lamb Shanks

Wonderful flavor. I got so much sauce that I'm freezing the 1/2 recipe or so I had extra and plan on making more shanks or stew with boneless lamb. I only had dried herbs, but they worked fine using 1:3 ratio of dried:fresh herbs. Definitely a winner!

Killer Cheesecake
