Italian Sausage Soup with Tortellini

Wow! This soup was really delicious and easy. Made it "as is" except to cook the tortellini separately so that the next day's serving wouldn't have soggy pasta. I just put the tortellini in the bowls, then poured the soup over it. Served with Parmesan as suggested. My hubby gave it a definite "thumbs up".

Spicy Black Bean Salad

Made this to be a filling for some burritos. It was so yummy! And my vegetarian daughter loved this. Definitely let this chill for a couple of hours. The flavors blend very nicely.

Pesto Pasta with Chicken

DELICIOUS! Family loved this. Made pretty much as the recipe states, except for using Dreamfields pasta because it is a low carb pasta,and cutting down on the red pepper flakes (personal preference), but other than that everything was the same. I like the fact that it is low in sodium and cholesterol too.

Slow Cooker Beef Pot Roast

YUMMY! Made this pretty much as written except forgot to buy the mushrooms. It was still delicious, although I'll remember to put them in next time since we like mushrooms. I also followed one reviewer's suggestion to add potatoes (red ones quartered) for the last 45 mins. So glad I did. There was lots of liquid to go with the meat (which was fork tender) and vegetables (cooked just right). I did add a little sprinkle of salt to my serving, but that's just my taste. Thanks for the recipe.

Pub-Style Vegetarian Chili

DELICIOUS! My vegetarian daughter was visiting, so I wanted to find something without meat that ALL of my family would love. This was it! Used half black beans and half dark red kidney beans, and added some chocolate (5 mini semi- sweet chocolate chips)as several reviewers suggested. I think the chocolate gives it a more full-bodied taste and texture. None of us missed the meat, and it was great by itself or with added cheddar or Parmesan cheese. By the way, instead of adding the hot sauce to the chili, I just placed it on the table, but none of us used it as the chili had just the right kick to it. I'll definitely make this again.

Cranberry and Almond Rice Pilaf

Wow! This was delicious. Been trying to find a recipe similar to Fish City Grill's rice that they serve with their talapia. This wasn't it, but it was absolutely delicious, and I'm glad I tried it. It has a mildly sweet flavor that complements my blackened talapia toning down some of the spiciness. Easy to make too. It was great without the cilantro and extra onions, but I might try them next time just to see the difference. The slivered almonds are a must though.

Black Bean and Corn Quesadillas

DELICIOUS! Wanted a vegetarian dish to serve my vegetarian daughter, but this was so easy and delicious that I now make them all the time. I find that this recipe makes about 12 quesadillas. And to make it easy, I spray 2 large baking dishes with cooking spray, fill the quesadillas, fold them in half, place them in the dishes, spray the tops with cooking spray, and bake them at 350 for about 15 mins. The leftovers are just as good if you put them in a COLD oven and heat until the temperature hits about 350. Don't microwave the leftovers!

Slow Cooker Pulled Pork

Took a chance with this recipe even though it sounded strange using root beer, but so glad I did. My husband and I loved this, and it was sooooo easy! The only think I'd add (if you don't mind the calories) is serving extra barbecue sauce on the side. Thanks Livie's Mammy for an easy and great recipe.

Slow Cooker Cranberry Roast

Great recipe! I used beef. Also added quartered potatoes and carrot chunks about 4 hours before it was done as one reviewer suggested. Everything was DELICIOUS! I also used cornstarch in a small amount of water to thicken instead of the butter and flour. Thanks for the recipe.

Mizithra Browned Butter Pasta

LOVE this recipe which is the same way the Spaghetti Factory makes it. The only problem is that I now live in TX, and there is no Trader Joe's or Spaghetti Factory to buy the Mizithra cheese. Does anyone know where else it can be bought?

Slow Cooker Cranberry Pork

I am amazed that this recipe only has a 4 star average. I have gotten some really good recipes from this site, but this one is one of the best yet. I did take the advice of others and seared the meat first, salt and peppered it, and added 1 tbs cornstarch to make the sauce thicker. My family LOVED this roast. It was fork tender had wonderful flavor, and was so EASY. I have decided to make this for our Christmas dinner. Thanks Dawn for such a delicious recipe.

Mini Meatloaves

I've been making these wonderfully delicious mini meatloaves for years, only we've called them Lil' Cheddar Meatloaves. And if I'm making them and in a hurry to get dinner done, I just make one large loaf instead, and bake it about one hour. Either way is yummy.

Easy Chicken Fajita Soup

Yummy soup! The texture was more like chili, not runny like most soups. I used a small can of green chiles instead of the poblano pepper and also added a small bag of frozen southwestern style corn along with an extra 1/2 cup broth as another suggested. Since we don't like really spicy stuff, I left out the hot sauce. It turned out great. In fact, I don't think making minor changes would hurt this recipe because so many flavors are blended together. This soup was very good the second day as well.

Onion-Roasted Potatoes

Very yummy and so easy too. ! As others suggested, bake at a higher temperature if you like them crispier. I made the recipe as is since it was my first attempt, and even though the potatoes were soft, everyone still loved them and all were eaten. So, crispy or not. these are delicious.

Marinated Ranch Broiled Chicken

This chicken recipe was so easy and delicious. Very tender. My very picky 22 year old loved it and even took some to work the next day for lunch. Made it exactly as written except to flatten the chicken breasts before marinating them. Thank you SUZYNAGY.

Easy Salsa Meatloaf

Except for baking this for 1 hour instead of 45 mins, I made this exactly as written. My family loved it, even my picky eater daughter who thought it was the best meatloaf ever, especially since it has no onions (which she hates). I didn't think I would like it because of the salsa, but it was really good. Leftovers for sandwiches were good too. Thanks Tinkerbell15.

Teriyaki Chicken

I've been making this recipe for years, except I always add a small can of pineapple chunks along with its juice (or fresh if I have it on hand) and a few slices of green bell pepper. The pineapple juice cuts down on the saltiness and gives it a sweeter taste. I also serve it with rice because the juices give the rice a yummy flavor.
