Spinach Tomato Tortellini

This was delicious! I would wait to start the tortellini until the other mixture is cooking though, because mine was finished cooking well before the sauce was bubbling. It may depend on your tortellini, though (mine had a 5 minute cook time).

Cabbage Fat-Burning Soup

I didn't make any changes to the recipe, but did let it cook for much longer than 25 minutes. It was delicious but I felt it needed some salt and my husband said he will be adding some hot sauce on his next bowl! It definitely makes a LOT of soup, so there's plenty for freezing.

Spinach Quiche

This tasted amazing as is. That said, I would lessen the butter next time just so I can live with myself after eating it, because it is a bit rich. . . I made this a second time with 1/2 the butter and it was just as delicious. yum!

Southern Peach Cobbler

Following advice of others, I baked this in my large casserole dish rather than my 2 qt to avoid a soggy middle and it turned out great! I also used 3/4 cup white sugar and 1/4 cup brown and added about a teaspoon of cinnamon to the flour mixture. This was so good, I had to keep myself from eating it all!

Black Bean Salad

This was amazing!! Just what I was looking for. Crisp, fresh, and flavorful. I did forget the green onions (which are not my favorite anyway), and never did find pimentos at the grocery store, but I couldn't tell anything was lacking. Excellent!!!

I didn't have pecans or rum, so I substituted with walnuts and vanilla, and this was great. Very nice banana flavor-not too much, but definitely there. yum

Cream of Pumpkin Soup

I would give this 5 stars but it needs brown sugar (about 2tbs) to sweeten it just a bit. Also I cut the salt in half but that could have been my chicken stock that made it saltier. With these small changes, an excellent recipe!

Swiss Chicken Casserole II

This was great! I did forget to cover it but did so about halfway through and all it did was give the stuffing a little crunch, but we thought it was great that way. Also, substituted white wine for the milk as others suggested, and since I didn't have any swiss cheese, I used shredded mozzarella and a little shredded parmesan. Will be making this again!
