Oven Omelet

This was really good. I used ground sausage which I cooked with some chopped onion. I used 1 cup of Southwestern hashbrowns in the mixture and added a little more cheese. I poured it into an 8 1/2" round pie plate and topped with the remaining hashbrowns. Baked for a little over an hour (checking it at 45 min and again at 60 min by inserting a knife into the center) before the knife came out clean. It froze well too. I can take a slice to work for breakfast or lunch!!
