Romantic Chicken with Artichokes and Mushrooms

It was lovely. We butterflied the chicken breasts, pounded them, and dredged them in a mixture of salt, pepper, cornmeal and flour. We used olive oil exclusively for cooking. It's important to use the marinated artichokes, and of course, based on everyone else, we also added herbes de provence. Because the sauce was kind of thin, yet flavorful, I served it with rice, and it really worked. Easy, and delicious.

Raspberry and Almond Shortbread Thumbprints

I was really attracted to this recipe because there were so few ingredients! Still, these were wonderful. You can't rush baking, and I agree that the dough should be cold before going into the oven. Plus, it's important to make the cookies extra tall, so they don't spread too much. These were easy, beautiful, rich, and delicious.

Tomato Chicken Parmesan

Super easy and delicious. I butterflied the breasts and pounded them really thin. I used some cornmeal because I had no breadcrumbs(!!!). Still it was (to quote my fiancée) "excellent." Not bad, huh?

Parmesan Chicken

This was easy, and surprisingly delicious. I butterflied the breasts, pounded them super thin, and cooked them on a hot stainless steel skillet. I had no breadcrumbs, and used cornmeal (!!). Pretty pathetic, I know, yet still, it was (to quote my fiancee) "excellent." Plus, I had dinner on the table in like 20 minutes! Not bad, huh?

Honey Corn Bread

I made this almost exactly as written, except I added a little more salt, and a little less honey (we ran out). The recipe reads like a cake recipe, I think, with lots of fatty additions (1 1/2 cup half and half?? Half a stick of butter??), and I didn't eat much of it because I knew what was in it. Still, people loved this stuff! I got more compliments on it than I did on my chili, which took a lot more effort than the bread! It's a real crowd pleaser

Chex® Muddy Buddies®

Honestly, this is a 5 minute recipe, which is a phenomenal crowd pleaser. It's a great thing to bring to something like a picnic, or a football game gathering, and it takes no time to make. Just don't eat one, because you'll suddenly have an empty bowl staring back at you.

It's Chili by George!!

This is my go to chili recipe. I like it because it is very basic. It is very conventional. While I often tvariations of chili recipes (adding brown sugar, different peppers, etc), this one is kind of a staple. It won't let you down.

The Best Rolled Sugar Cookies

Great sugar cookies. Not too hard to make, but the added effort of refrigerating the dough, then taking it out, re-working it, and rolling it out, made things a little more time consuming. I'm going to try to skip that step next time, because it takes a while to make these cookies as it is. Still, they go fast, and they also make great gifts at christmastime!

Buttercream Icing

The best way to stop eating too much desert is to start making them! I didn't know that icing was basically sugar and butter! I guess that explains why it's so delicious... I made it with 3 cups sugar, 1/2 c butter, and a little extra milk. I couldn't possibly use shortening. It was divine.

Banana Banana Bread

Pretty good. Mine got done in less than an hour.. I'm surprised nobody else said that, because my oven is not particularly hot. The secret to its goodness, I think is not necessarily a lot of bananas, it's the stick of butter. Like Julia Childs said, "the difference between a good dish and a great dish is a stick of butter.." (or something like that). Right again, Julia..

Deviled Eggs

Good flavor, and easy. But too much salt! I just followed the recipe to the letter (which I don't usually do, but I was in a weird mood), and they were way too salty. Kind of ruined it. So cut down on the salt, and adjust according to taste.

Artichoke Spinach Dip

I did not care for this recipe. Plus, this recipe serves about 100, so if you're having a small dinner party, you'll have a ton left over, even if you only make a half recipe. Some people were really drawn to this dip, though, and seemed to thoroughly enjoy it. It may work for an "extended appetizer" situation, like a superbowl party better than a dinner party.

Artichoke Chicken

I did not care for this. Kind of a big, sloppy, mayonnaise mess. My husband agreed. Kind of a bummer, because it was so easy, but we didn't like the way it tasted or looked.
