Easy Homemade Pie Crust

Easy and delicious. I doubled the recipe and put it in the freezer with wax paper between the patties - and it was exactly as good after a week as when fresh. I didn't have a food processor so I just cut the butter into 1/8" pats and mashed it into the dry ingredients by hand, which worked just fine. I also tried a variation in which I used vegetable margarine instead - don't do this! It made the crust tough and almost impossible to cut!

Mrs. Sigg's Fresh Pumpkin Pie

Good pie - came out soft and tasty but brown on top. Definitely needs to be refrigerated overnight, though - eat it right away and it's really too liquidy and eggy. Also - really needs more spice! I ended up using 2 tablespoons of fresh-ground nutmeg, 2 tbsp cinnamon, and 1 tbsp allspice - and it was so delicious! For the crust, I recommend John's Easy Pie Crust - http://allrecipes.com/recipe/easy-homemade-pie-crust/detail.aspx - it's easy and I made four of them in 30 minutes!

Crispy Potato Pancakes

This was a great recipe - the addition of the baking powder and flour made them puff up while being fried, which insulated the inside from the heat, making them fluffier and softer inside while still brown and crispy outside! The only quibble I have with this recipe - you have to squeeze the juice out of the grated potatoes before mixing them with the rest of the ingredients, or it becomes one big soggy wet mess! In addition, I was unable to make them crispy with just half a cup of oil - I ended up going the traditional route and frying them in 1.5" of oil in an electric fryer - after draining and sitting on paper towels for a few minutes, they have the same amount of oil in them as with pan-frying, and the oil can be re-used if it's not overheated. But still, good recipe and I'd make it again - with those minor changes.

Applesauce

I found this recipe simple to understand and easy to follow. However, I used overripe Gala and Fuji apples, which are already very sweet and tart - which made it possible to make the applesauce without any sugar added! Also, some cinnamon would have made it a bit more palatable. But it did go well with my latkes!

Chicken Liver Pate

Delicious. I used chinese rice cooking wine instead of cooking sherry, but it's quite similar - and I put in about 1/3 less of the wine, seeing others' comments about it being too liquid. It came out pretty syrupy, but after a couple of hours in the fridge it got a nice buttery texture and is perfect for spreading. And it tastes great.

Breaded Dijon Pork Chops

Simple and delicious. Took 10 minutes to prep and 10 minutes to cook, and tasted great! One thing: be careful when turning the chops as the breading has a tendency to come off even on a nonstick pan!

Buttermilk Pancakes II

Made these for my 32-student co-op this morning. I didn't have buttermilk, but I had buttermilk powder, which I added to regular milk (1 heaping tablespoon per cup) to make extra-strong buttermilk. Worked well - the pancakes were light and fluffy and very popular!

Four Cheese Margherita Pizza

Wow. Delicious way of making a pizza margherita, even though I started with canned tomatoes and used cheddar instead of mozzarella! It was the best pizza the co-op had ever had, and I'm definitely making it again!

New York Italian Pizza Dough

Great dough, made a very crispy and crunchy crust when rolled and stretched thin. Problem was that I kneaded it too much and it became so springy that I found it almost impossible to stretch to fit the pan; it kept springing back and I had to deliver the pizza to the co-op 15 minutes late (well, and the falafel disintegrated, but that's another story)... I think it would definitely have benefited from rising overnight in the fridge as opposed to in 3 hours on the counter as I did.
