Seven-Up® Cake II

This recipe was given to me by a friend. I made it last night, the first time for a bundt cake. I was very disappointed. I baked it at 325 for almost 2 hours. The outside was crusty and the inside wasn't quite done.

Moist Cinnamon Rolls

These are pretty good. I served them for breakfast at my bed and breakfast this morning. The guests gave rave reviews. Not everyone likes raisins, so I put craisins in half of them. I let raise in the sunroom, and did the kneading by hand. I wasn't sure how to make them and freeze them and use a carmel sauce, so I made the dough, sliced it and froze on a cookie sheet. I baked two yesterday and used a frosting, instead.

Apple Carrot Muffins

XLNT! I made these and start to finish, hand grating the carrots, it took less than an hour. VERY moist and tasty. Served to my bed and breakfast guests, who gobbled them up. I used "Wheaties" cereal and golden raisins, for those guests who do not like traditional raisins. I appreciate that it is low in fat. I didn't have any buttermilk, so I put a little vinegar in the milk and let it sit while I combined the other ingredients.

Award Winning Soft Chocolate Chip Cookies

Tasted good. Soft. Used 1.5 cups flour and 1 cup whole wheat flour and 1 tablespoon of vanilla. No complaints. Left in convection oven for 11 minutes, but I accidentally overheated it before putting in cookies, so I'm not sure what temp they actually started out. I left oven door open for a few seconds to let out excess heat. No more time than average.

Ground Beef Enchiladas

I didn't have cream of chicken soup, so I used cream of celery soup instead. I didn't have a package of taco seasoning, so I used 1 T taco seasoning from a recipe I found here and 1 T flour, then added the water. I didn't have regular yogurt so I used 1/2 c vanilla yogurt (not recommended because it made it sweet) and 1/2 c cottage cheese. I also used large flour tortillas because that is what I had on hand. I did cover with aluminum foil because I was concerned they may dry out. I got 5 large enchiladas that were a bit sparse on filling, but that was my fault. VERY TASTY!

WOW! I have a bed and breakfast and needed a quick bread. I found this recipe and it was on the table within a little more than 1/2 hour. I didn't add all the liquid. I added the egg to the 1 c milk and beat it. I added as much liquid as I needed. I was left with 1/3 c liquid. I also used 2 cup of white flour and 1 cup bleached whole wheat flour as I am beginning to do with most of my recipes, usually adding 50% bleached ww flour. I should add that I used a juice glass as my "cookie cutter." Using a food processor made incorporating the butter, child's play. EXCELLENT! THANKS FOR SHARING!

Maple Banana Bread

I had some left over maple syrup left from breakfast and I didn't want to waste it. I added enough to make 1/2 cup. I didn't have any maple extract, so I used vanilla. It didn't have TOO much maple flavor. I made them into muffins for our bnb. They were, "OK," but hubby thought they were pretty good. I've given each guest 1 and they haven't come back. They rose nice and tall, something I have trouble achieving with my muffins. Batter was pretty thick, but in the end, the texture was perfect.

Fruit Cocktail Cake V

I have a bed and breakfast and had guest who was lactose intolerant. I made this cake and wasn't sorry. Hubby thought it tasted a bit like carrot cake and didn't like it, but the guests devoured it and I took the leftovers to work. They all liked it as well, and one gal asked for the recipe! I cut the recipe in half so I wouldn't have a lot of leftovers to tempt me, and baked in a 8x8 (or thereabouts) pan. It baked in about 20 minutes in my GE Advantium convection oven. I have another lactose intolerant guest tonight and will make it again tonight!

Rhubarb Cake I

YUM-O! as Rachael Ray would say! XLNT! I cut the recipe in half, as I didn't want too much left over after serving guests. I baked in 8" square pan for 25 minutes, your oven may take a bit longer. I used the whole egg, not cutting it in half. No worries! I cut cake into 9 pieces and served 7. Only 1 piece was left over for with a breakfast for 4. Oh yes, I used TWO cups of rhubarb when cutting this recipe in half. Just right!

Chocolate Glaze I

Warm Sweet Onion Spread

I had a question. I assume that if I make this in a pie plate as directed, I will be able to transfer it to a nicer plate and it will still look nice? I was wondering if putting it under the broiler would ruin the look if I transferred it. Thanks!

Comforting Cube Steaks

Hubby liked it. Used tenderized round steak rather than cube steak and left it in the oven 2 hours. We did not notice a sweet taste, using Diet Seven Up.

Mom's Zucchini Bread

I made this as per instructions, but put in an 8x8 pan since I have problems getting the center of my breads done. I figured if it was thinner, it would get done sooner..NOT! I must have had it in that glass pan a good 70 minutes and I still had a raw spot in the middle! I even put a toothpick in the middle that came out clean after about 45 minutes... The sides were crunchy and I was hoping for a softer texture.

Quick Creamy Chicken and Noodles

I fried/grilled 2 pre-frozen chicken breasts that I had cubed. I cooked some noodles and when done, mixed with cream of chix soup and the milk. I also tossed in some canned mixed (drained) vegetables that I had sitting on the shelf. I forgot the Parmesan cheese and parsley, but it was still good. I am a complete klutz when it comes to trying to figure out what is for dinner and this did the trick for me.

Janet's Rich Banana Bread

Very good! I had neither sour cream nor yogurt, so I chose to use cottage cheese (I'm normally not this creative!) instead of the sour cream and it turned out WELL! Thanks for sharing, Janet!
