Fettuccini with Basil and Brie

Awesome. I'll likely roast or saute the garlic next time. It was a bit strong. Great summer dish to use basil and tomatoes from the garden.

Zucchini Brownies

Great lowfat recipe! I used an oil that is a mix of canola, olive and soy, and Tuvia baking sugar (3/4c as a replacement of actual sugar). I shredded 2 zucchini which was about 2.5 cups. The mix starts out very powdery. I was thinking this was not going work out. With a wooden spoon I finally mixed or moistened all ingredients. It is thick, not a pourable batter. I spread the blob of batter out in the 9x13 and baked for 30 min. Turned out perfect, really good.

Fast, easy, and delish! i swapped out 1/3 of the safflower oil for Olive Branch's Lime Infused Olive Oil. Added shrimp and veggies cooked in my wok.

Honey's Butter Cake

Turned out great. I did not do the cinnamon sugar swirl. I needed a plain pound cake for use with a chocolate ganache Amaretto whip topping. As a basic poundcake recipe it was perfect and uses fewer eggs than most pound cake recipes which is a plus for watching cholesterol. And I was short on eggs too. Used "light" sour cream. I did half real butter and half Smart Balance omega 3 spread. Creamed up perfect with the sugar and lowered the sat. fat intake for me. I cut sugar back to 1 3/4. 2 cups seemed like alot. Next time I may sub some baking Truvia for part or all of the sugar. Cook time was an hour & 5 min. Used a bundt pan. Good recipe!

Very Easy Risotto

This is good recipe easy recipe. I like it for the lower sat. fat compared to actual creamy risotto rice dishes using cream. Near the end I gave it a gourmet flare stirring in peas, sliced fresh mushrooms, fresh parsley and a lite pour of truffle oil.
