Chicken Enchiladas II

Loved this recipe! I changed it a bit just to make it a little more healthy. Used fat free sour cream, reduced fat cheese, 98% fat free soup and skim milk. I might add some onions & diced tomatoes next time but was delish just as is!

Perfect Pumpkin Pie

Yummy! Never made pumpkin pie before and this came out great! I'm a beginner so used the recipe as is and it came out great! Everyone loved it at Thanksgiving dinner!

Broccoli Cheese Bake

My father loved this recipe but others thought it was just ok. Possibly because they just didn't like swiss cheese? I'll try it with cheddar or possibly a mixture next time. Good recipe though and very easy to make.

Appetizer Chicken Kabobs

Loved this recipe! I marinated the chicken, green onions, mushrooms, &red peppers overnight. Added zuchinni & pineapple as well and it was wonderful. Next time I would add the green onions to the mariade but wouldn't put them on the skewers next time as they were limp and a bit slimey.

Bourbon Pecan Chicken

This was really good but I only gave it 3 stars because I changed it and for the amount of butter it really isn't worth the fat/calories. Didn't bother with the clarified butter used unsalted butter & oil instead. Good but like I said not worth the extra treadmill time!

Beth's Spicy Oatmeal Raisin Cookies

I was very disappointed with these especially after the great reviews! The clove didn't go at all and was almost overpowering even thought I added a bit less than called for. The bagged oatmeal cookies that I usually make are ten times better with half the effort! Sorry but I won't be making these again!

Old-Fashioned Cheese Potatoes

Loved these potatoes! Diced up half an onion and 2 cloves of garlic. Also used half American Cheese and half cheddar. I cooked it for 30 minutes covered with tinfoil and then cooked it for the remaining time uncovered.

Fabulous Wet Burritos

So good! I've been craving Mexican food and this hit the spot! Did change it up a bit by adding cooked white rice and cut down on some of the fat by using ground turkey, fat free sour cream, & fat free refied beans. Also followed another cooks suggestion and put it in a 9x13 pan and cooked for about 20 minutes at 350. Will make these again and again!

Chicken Alfredo with Plum Tomatoes

So good! The wine really made the sauce! I added two cloves of garlic along with the tomatoes and cut up the chicken but didn't change anything else and it was amazing!

Fiesta Chicken Enchiladas

This was super easy and very good! Used reduced fat cream cheese. Served with sour cream & guacamole. The only changes we made was to add green onion and leave out the clinantro (just because I'm not a fan). Will make this again and again!
