Penne with Chicken and Pesto

This tasted really good, but wasn't very pesto-y. I realize that being made with cream it wouldn't have a traditional pesto flavor. I made it with a 1/3 cup of pesto, and it still needed more.

Pasta with Peas and Sausage

Pretty good. Very simple and so fast! I used a sun dried tomato sausage instead, which turned out great. The only alteration I would suggest is to the sauce. The cream and butter alone tastes rather bland, which makes any bite you take WITHOUT sausage very plain and boring. It needs a little more flavor to it, maybe some garlic salt?

Raspberry Truffles

These tasted really great. I will make them again for sure, with a few adjustments. That in mind, my only complaints were it not setting very well. This isn't so much the recipes fault, since it happens a lot with truffles, but after several hours of chilling it could be rolled into balls, but the heat from my hands melted the outside instantly, making rolling them in powdered sugar or dipping them in chocolate near impossible. Thats not to say don't make this recipe, but keep it in mind, its not one of those few perfect recipes. I also suggest adding a little more raspberry perserves. As it is the fruit flavor gets a little lost in the mix.

Spinach Quiche

Made this this morning, it was so good. I love spinach, but only in moderation. So many recipes like this have so much spinach that it becomes the only thing you taste. That was not the case at all with this. I didn't use the mushrooms or onions, cause I have picky eaters (myself included), and only used 3 eggs intead of 4, but it turned out so great. Insanely simple, can't wait to try it again.
