Black Bean and Corn Salad II

Very tasty! After trying this recipe a few times I cut the oil in half, omit tomatoes, double bell pepper, and add an extra half cup of corn. You only need one medium lime to get enough juice.

Tres Leches (Milk Cake)

Warning: if you bake this in round cake pans intending to make a layer cake, you _will_ have excess liquid that won't get absorbed, and the cake will _weep_ even after you spread the whipped cream on it. Between the two layers I spread strawberry filling (thinly sliced strawberries, mixed with briefly boiled water, grenadine, lemon juice, cornstarch, and sugar), which added some extra flavor.

Six Can Chicken Tortilla Soup

Way too salty, not enough spice - make sure you drain (and for beans, rinse) everything. I swapped one can chicken broth for 2 cans cream of chicken, added 1% milk, and added tons of chile powder, garlic powder, and cumin. Pretty good with some touch-ups; very easy, cheap, quick and tasty.

Eclair Cake

My coworkers loved this (I'm talking 2nd and 3rd helpings), and several people asked for the recipe. Heating the frosting made it a snap to spread over the last layer of graham crackers.

Apple Bundt Cake

I used a nonstick bundt pan, checked on the cake at about 40 minutes and it was already burned. Had to cover with foil until the center finished baking. I trimmed the burned bits and nobody noticed. People seemed to like it, and it was pretty good considering how charred it was after only 40 minutes. Next time I'll either have to use a different pan or watch the cake like a hawk.

Poached Salmon with Hollandaise Sauce

This was delicious! The salmon turned out so perfect and moist, and the hollandaise sauce was a nice touch. My boyfriend was apprehensive until the first bite - now it's on the "Favorite dinner" list.

Fresh Pear Crisp

My coworkers RAVED about this at my office potluck. Many of them have dietary restrictions, and this recipes was healthier than the many crisps that use canned pears. It was a little bland to me, but nobody else seemed to notice. I did use butter instead of margarine.

My Favorite Sesame Noodles

I had to make this a few times before I got it right, but it was definitely worth it. Listen to the reviewers who recommend letting the noodles sit after you've combined them with the sauce, the longer the better. Also, my recommendation is that if you are mixing in vegetables (I used carrots, brocolli, and edamame) use a little bit more sauce. If you love sesame oil, this is a great recipe.

Ginger Glazed Mahi Mahi

The frying temperature was a little high - my fish got a little charred on one side very quickly. There wasn't as much flavor as I'd like, but it was a quick, easy meal on a weeknight. I served steamed vegetables and white rice with the Mahi Mahi and my fish-hating boyfriend ate it without complaint, which is all I can ask. I probably won't make it again without modifying the recipe.

Tonkatsu / Katsu Sauce

My mother is from Tokushima, and the recipe she used when I was growing up was very similar to this one. Oftentimes, we just mixed ketchup and worchestershire sauce without adding anything else. Also goes great on things like croquette or okonomiyaki.
