Chococonut Chip Cookies

Excellent! I used 1/2c butter and 1/2c extra virgin Coconut oil. It's healthy and adds a little more coconut flavor. I also added toasted almond slivers just because I had them. These were a big hit at the birthday party I took them to.

Coconut-Curry Lentil Stew Served over Quinoa

This is really good, I personally loved it. My four kids ages from 3-12 all really liked this and they are really picky. My husband even liked it and he is not a lentil fan. I only used 1 tsp of salt for the quinoa and I used green lentils added 1 c water and cooked for an hour. The lentils were not mushy - just right. I will make often.

Buttermilk Oatmeal Muffins

Everyone I make these for loves them! This is a wonderful muffin recipe. I sometimes make changes to fit the mood and make them a bit healthier. Our favorite variation: Add 1/2 c finely choppped walnuts, 1/4 c wheat germ, 1/2 c applesauce (and no veg. oil). Plus I use finely ground whole wheat in place of the all- purpose flour and old fashioned oats in place of the quick - cooking variety. Also great with some dark chocolate chips added. These make a nutrient packed breakfast.

Downeast Maine Pumpkin Bread

This is an excellent recipe! I made one loaf and then also made a bundt cake just out of necessity (only have 1 loaf pan.)I topped the bundt cake with a cream cheese glaze and I thought it would be more like bundt cake shaped bread, but this recipe is so light and fluffy that it actually passed for a cake. The flavor was perfect. The texture was perfect. I will be making this (in loaf pans) for Christmas gifts this year for sure! I did use 1 1/2 c fine whole wheat, replaced 1/2c applesauce for 1/2 of the oil, and had to use honey in place of 1/2 the sugar because I ran out. Thank you so very much for this recipe!

Pumpkin Cream Cheese Muffins

These were okay. I followed the recipe, but they didn't taste much like pumpkin. The cheesecake and streusel topping were great! I will try this again adding more pumpkin and also pumpkin pie spice like some other reviewers suggested.

Fluffy Pancakes

Every Sat. morning for years I have been making my family scratch pancakes (because I've never found a mix that I love and its just turned into tradition.) This one is everyone's favorite by far and I have tried sooo many. I'm so glad I found this recipe because they really are fluffy! No more beating my egg whites! I use 1/2 all-purpose and 1/2 whole wheat flour to add a little more nutrition. I have been out of butter and used applesauce in its place and they still turned out great (and low fat!) Also, I always make extra's because they freeze so well and my kids like to enjoy them before school occasionally. Thank you for this recipe!

Absolutely Fabulous Greek/House Dressing

LOVE this dressing. I use fresh garlic and onions, but aside from that, I followed the recipe exactly and my whole family loves it! I have made it 4 times in the last 4 weeks.

Swedish Cream Wafers

I made these cookies for Easter and everyone raved! My hubby's new favorite! They are crisp, light, but also creamy... very different in a very good way. I didn't use the egg yolk because of the little ones, but it didn't seem to be missing anything.

Eclair Cake

This is a really good and very easy cake to make. Although I'm a chocolate lover, I hesitated to make something with store bought chocolate frosting. So instead, I made ganache in place of it. 2 cups ghiradelli dark choc chips melted with 1/2 c heavy cream. My 9 year old daughter made the rest of the cake exactly as the recipe called for. It was a huge hit at our Christmas dinner, everyone raved. Thanks so much for this recipe! It has already been requested for next Christmas!

Flatlander Chili

Excellent chili recipe! I used v8 juice instead of tomato juice because thats all I had, and I omitted the cayenne pepper because of the kids, but it still turned out very good. My 4 year old ate 3 bowls!
