Downeast Maine Pumpkin Bread
This is an excellent recipe! I made one loaf and then also made a bundt cake just out of necessity (only have 1 loaf pan.)I topped the bundt cake with a cream cheese glaze and I thought it would be more like bundt cake shaped bread, but this recipe is so light and fluffy that it actually passed for a cake. The flavor was perfect. The texture was perfect. I will be making this (in loaf pans) for Christmas gifts this year for sure! I did use 1 1/2 c fine whole wheat, replaced 1/2c applesauce for 1/2 of the oil, and had to use honey in place of 1/2 the sugar because I ran out. Thank you so very much for this recipe!
