Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Party Plentiful Guacamole

Zucchini Brownies

Fabulous! The zucchini was incredible and made the brownies super moist. I loved them, and am definitely going to make them again. I substitued the sugar with splenda, and tasted fine.

Eggplant Parmesan II

Delicious! The prep took forever! NExt time, after slicing the zucchini, I am going to dip them in the egg whites adn shake them in a bag with the bread crumbs. Individually coating each slice with the bread crumbs took way too long. I am glad I baked them though, because it added an extra special flavor.

Black and Blueberry Muffins

Spinach and Feta Pita Bake

Tasted great! Healthy and very filling. It was kind of hard to keep the feta cheese on top of the pita, but who cares, I picked it off the baking sheet and put it back on.

Butterscotch Brownies III

I used half white flour and half whole wheat flour, and the brownies tasted great. A little dense, and not too sweet, but it was perfect. For the icing, I read some reviews and tried to halve the recipe. I would not do that next time - there was not enough frosting, and it just looked sloppy when I spread it on the brownies. Next time, I will use the full amount.

Cheese Ravioli with Three Pepper Topping

I added mushrooms to the mixture in the skillet, and I was surprised at how everything shrunk down as the peppers cooked. It tasted all right - a little bland. I added some light cream and less broth, but it never evaporated. I used tortellini and it added a lot more flavor than the sauce.

Zucchini Parmigiana

So delicious! I went nuts with the breading and the baking of the zucchini, so the whole preparation took about 2 hours. I realized after the fact that what I could have done was sliced up the zucchini, dunked them in the egg whites, put them in a bag with bread crumbs and shaken the bags so to evenly coat the zucchini. I am going to try it next time. I also subsituted the cottage cheese for the ricotta, and it definitely made it lighter. I am making it again for a party!

Szechwan Shrimp

Tasted great! I loved it with brown rice. I bought the shrimp from the grocery store, cooked but with tails - I very quickly learned to remove tails in a hurry. I added a lot more than 12 oz of shrimp but to me, the more the better! I didn't think there was enough heat, but it could just be because my red pepper is not good quality.
