My favorite things to cook
I love making cookies and cakes from scratch. I've tried cheesecake a few times cause I just love cheesecake, but they don't turn out so well.
My cooking triumphs
I'm especially proud of this white cake I made with an almost custard filling topped with strawberries that I made for our end of the year party at my job. It had a fondant sculpted Bobcat that my friend made on top of it. I'm really proud that the cake held despite the weight of the Bobcat.
My cooking tragedies
I was making frosting for a lemon cake for my friend's birthday before she came home. I had made one batch of frosting, but it turned out not to be enough. With not enough ingredients and not enough time, I rushed a frosting batch that went crazy. It initially started out watery, so I tried adding more powdered sugar, only making it lose it's original flavor, not making it thick enough for frosting. I then tried putting it on the stove in hopes it might get thicker with heat; also a failure. Finally, I tried to add flour, which eventually turned the frosting into a solid block stuck to a saucepan.

The Best Lemon Bars
This recipe is a great! The crust felt a little bland, so I added some ground graham crackers (3 tablespoons ish) and reduced the flour a tad. I concur with the other reviewers in that an extra juiced lemon goes a long way. Adding lemon zest gives it a nice kick too.

Quinoa Black Bean Burgers
This was a good veggie burger. It had a good consistency and taste. The only thing I did differently was leave out the minced onions. It felt a little redundant since I was using onions as a topping.

Apple Crisp with Oat Topping
Easy to make and delicious at the same time. I took another reviewer's suggestion to use a variety of apples (I went ahead and used 6 different kinds). The result was amazing! I swear it tasted like I used the 'perfect' apple. Left it in the over for longer than the recipe called for. You can smell it when it's about done: first the cinnamon smell comes out of the over, then it is followed by the apples. I left it in for 5-10 minutes after that for a more crispy crust. Everyone should try this!
