Peanut Butter Bars I

These were a big hit at a party I hosted recently. Everyone raved about how they tasted like big Reeses PB cups and asked me for the recipe. The other desserts on the table got overlooked next to these. I only had unsalted butter on hand when I made these and next time I will be sure to use salted. I could tell something was missing. Thanks for sharing a great recipe, Nancy!

Rustic Round Herb Bread

YUM!! I just made this for dinner and it was a hit with my family! Got on allrecipes before dinner to find a super quick rustic bread to go with leftover soup and this one was perfect. Big plus that it only took me ten minutes to whip up and 20 min to bake. Thought it might take longer since I used a glass pie plate instead of a cake pan. Super quick and easy! My husband and I both thought the bread reminded us of the "Cheddar Bay Biscuits" at Red Lobster, as far as the consistency and look. They just needed some garlic and it would be identical. Omitted the sage since I didn't have any and added a touch of rosemary (both ideas came up in other reviews). I will definitely add this recipe to my list of regular bread recipes.

Best Salmon Bake

Very easy to make! I made this for dinner last night and my husband and son loved it. My son went back for seconds which he never does with salmon. And we eat a LOT of salmon since we live in a salmon fishing village in Alaska. I followed some of the other reviews and squeezed fresh lemon over the top just before putting in the oven (the picture shows lemon, but the recipe doesn't call for it??). I also sprinkled garlic salt. My husband even re-named it, "Salmon Fresco"! He even said the dish looked like something served in a nice restaurant. The tomatoes and green onion don't add flavor to the salmon (like a marinade would because it seeps into the fillet) but taste great on their own, enhancing each bite with fresh-tasting flavor. Delicious!

Rosemary Baked Potato Wedges

Added extra seasoning, as the other reviews suggested and they turned out great. Weren't as crunchy as I thought they should be, even though they were browned when I took them out of the oven. When I reheated them in the oven the next day, they were a bit more what I expected the first night, as far as the crunch. My husband and son loved them, too!

Jeanie's Falafel

Awesome! These are as flavorful as falafel in Israel. I made these for the second time tonight for dinner. Last time I had a problem with my chickpeas not mashing well enough (I couldn't get the chunks to go away no matter how long I kept mashing). This time, I started out using my Pampered Chef Food Chopper to get them finely diced. Then I mashed them. Much better consistency this time. I tried baking them, as someone else suggested. Definitely helped with the fat content and hardly affected the taste! Thanks for sharing your recipe.
