Beer Cooked Chicken

Reviewed: Apr. 6, 2013
I made this the first time and it was good. Since then I have changed it up a bit and it gets requested regularly. I too marinate the chicken for two hours turning them over in the beer halfway through. My husband is a home brewer and I use a Saison he brewed. I added a large garlic clove minced and a finely diced shallot to the mushroom saute. I seasoned it with some fresh thyme, rosemary, salt and pepper. Using Tinkerbell926's review I added cheddar cheese along with parmesan cheese. This chicken is so juicy and so flavorful. Thank you for sharing.

Swedish-ish Meatballs

Reviewed: Apr. 6, 2013
I would like to start out by saying I only used the meatball recipe and they were delicious. The family loved them. My best friend who is an amazing cook herself came over for dinner and loved them. The only change I made was to use beef with a higher fat ratio since my best friend has a pork allergy. There were no leftovers which is saying something since my family is made up of picky eaters, who all like something different. Thank you for sharing a new family favorite.

Extreme Banana Nut Bread 'EBNB'

Reviewed: Mar. 9, 2013
Best banana nut bread I have ever tasted. I used brown sugar and it gave the bread a slight caramel flavor. I used pecans instead of walnuts, I prefer the taste of pecans. This did not last long. Thank you for an excellent recipe that was easy to make.

Heavenly Halibut

Reviewed: Mar. 7, 2013
This was wonderful! My hubby who dislikes fish, loves this. I was unable to find Halibut and used Mahi-Mahi instead. I used Frank's Red Hot Sauce and did not add the additional salt. I baked at 475 for about 12 minutes and finished cooking on broil. I sprinkled this with Panko once the parmesan mixture was spread. This would go perfect with any white fish but, I will always use Mahi-Mahi. I will make this again. Thank you so much for the recipe and the tips.

Roasted Parmesan Asparagus

Reviewed: Mar. 7, 2013
This was an absolute success. I normally have leftovers, not tonight. I used some tips from other people who made this. I baked it at 475 for about 12 minutes and then broiled it for about 4 minutes. I added the lemon juice prior to cooking and it kept that vibrant green color. I added a little salt as well. I did skip the steaming as we prefer a little crunch to our asparagus. This is a wonderful recipe and I will make it again. Thanks for the recipe and thanks for the tips.

Shepherd's Pie V

Reviewed: Sep. 16, 2009
My hubby and I loved this one. He dislikes the texture of mashed potatoes so I made scalloped potatoes (boxed works just as well)instead for the topping. I followed the reviews by (1) cutting out the salt and steak seasoning (2) Sauteeing the onion flakes and added garlic clove in the fat from beef. Thank you for the excellent recipe.
