Downeast Maine Pumpkin Bread

I skipped the cloves because I'm not a big fan of spicy pumpkin flavors. After tasting them, I think I'll also cut the nutmeg in half in the future. However, aside from the slight spice change, this recipe was wonderful and definitely better the next day. I made mine into 3 dozen muffins (350 degrees for about 20 minutes), and they were still moist and delicious after 6 days.

Sweet Restaurant Slaw

Way too sweet if you use miracle whip and the full 1/2 cup of sugar. I cut it down to 1/4 cup sugar and used regular mayo and it was still a little too sweet. Also, the coleslaw seemed too dry when I first mixed the ingredients, but it was perfect after sitting in the fridge for a few hours.

Easiest Peanut Butter Fudge

I followed the previous reviewers' advice and slightly altered the measurements to 2 cups bown sugar, 3 cups powdered sugar, and a little over 1 cup peanut butter. This was still definitely sweet, but a very good peanut butter fudge and super easy. I followed the directions exactly and the fudge had a wonderful consistency and appearance.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I used a whole onion rather than half and cooked it until it was browned and almost caramelized before adding the other ingredients. This was fast, delicious, and cheap. I basically always have these ingredients on hand, so it's also a convenient go-to dish. I will definitely make this again!

Cherry Crunch

This was very easy and pretty tasty. My only complaint was that the crust was a little bland. I wouldn't make this for company, but it was a fast fix when I was in the mood for dessert without running out for ingredients.

Alyson's Broccoli Salad

I used a little less mayo and sugar, but otherwise followed the recipe exactly. This was delicious and very easy. It's also tasty with a little shredded cheddar mixed in, but it's definitely not necessary.

Pat's Baked Beans

I changed 2 things: I used 2 cans Bush's baked beans (one drained), and one can each drained kidney and butter beans). No garbanzo. I also used 1/2 cup brown sugar, but no molasses. These were DELICIOUS and easy. I would definitely make them again!

Zucchini Brownies

I followed the recipe exactly (but didn't add frosting) and made my boyfriend guess the secret ingredient. I waited until he ate a giant serving and raved about how delicious they were before I mentioned the zucchini. He didn't believe me until I showed him the recipe. These are wonderful, even without frosting!

Too Much Chocolate Cake

I followed the recipe almost exactly (I used mini chips and only about 1 cup), but made cupcakes (perfect @ 18 minutes). This is the first time in my life that my cupcakes were beautifully domed at the top. I piped on fluffy peanut butter icing from this site, and they looked and tasted AMAZING. I got a ton of compliments and had to stop myself from eating all 24.

Baked Tofu Bites

I hate to give a bad review, but these were not appetizing. They tasted like salt with an unappealing hint of maple. I am a tofu fan and know that there are plenty of ways to make it taste good. This is not worth the time and effort.

Awesome Baked Sea Scallops

I lightly sauteed the shallots and garlic before mixing everything together, but otherwise followed the recipe exactly. This was excellent served over whole wheat pasta. I would definitely make it again.

Fluffy Peanut Butter Frosting

I followed the directions exactly and the icing turned out great. Piping it onto your cake, etc would probably be your best bet since the thickness makes it difficult to spread, but it's peanut butter- what else would you expect? Very tasty- almost like peanut butter fudge. I would definitely make again!

Garlic Chicken

This was wonderful- crunchy outside and moist inside. Mine was perfect after 25 minutes. The only change was to warm the garlic and olive oil on the stovetop w/ a little crushed red pepper. I turned the heat off once it was fragrant. I also seasoned the chicken with salt, pepper, and onion powder and added a little oregano to the bread crumbs. My bf said it was the best chicken I ever made.

Tasty Lentil Tacos

I thought these were pretty tasty but not exceptional the first night we ate them. However, the lentils were so much better heated up the next day. The flavor and consistency improved greatly. We used the filling for tacos and spooned over nachos. I would definitely recommend making the filling ahead of time or when you're already in the kitchen cooking something else. Then you can easily reheat and assemble the next day.

It's Chili by George!!

I substituted undrained diced tomatoes for the tomato juice and used one can each kidney, pinto, and chili beans. This was a big hit during the blizzard last weekend. I could have used more heat, but I just added some hot sauce to mine after the fact since not everyone likes spice. I would definitely make this again.

Rosemary Red Potatoes

This is a wonderful side dish and is in regular rotation at our house. I always cook the potatoes for a full hour, stirring once or twice. This nicely browns the potatoes and onions and gives them a great roasted flavor. I also double the garlic and cut the onion into big hunks rather than just quartering. Add rosemary to taste.

Sopapilla Cheesecake Dessert

This was amazing! The top becomes almost like creme brulee- everyone LOVED it and it was so easy. I used the crescent dough without seams which was really helpful- I only had to stretch it out a little on the sides. No rolling necessary. As for changes, I added an egg to the cream cheese mixture which made it nice and fluffy. I used the whole amount of buter, but I think 1/4 cup would have been plenty. I think next time I'll try it with apple filling too. I'm sure it would go really well with the sugar/cinnamon crust on top.

Insanely Amazing Jalapeno Cheese Dip

As per other reviewers' suggestions, I used 1/2 mayo, 1/2 sour cream. I also baked in a glass pie pan rather than a bread bowl. I put it out for a few friends while I was preparing dinner and it was gone in 15 minutes. Very tasty. I used the exact amount of peppers and chilies, but the jalapenos were mild, not hot. The spice level was perfect.

Paul's Pumpkin Bars

Wonderful- everyone loved this recipe. I used 8oz of cream cheese and doubled the rest of the icing ingredients except for the butter (only used 1.5 sticks). I had leftover icing but I don't think the regular amount would have been enough. I would definitely make again!
