Shepherd's Pie VI

This recipe had gotten so many great reviews so I decided to make it for St. Patty's day last night. I'm glad I made the gamble because my family lOVED it and there was barely any leftovers! I followed the tip of using the pkg. gravy and water in lieu of beef broth and added to ground turkey. I also added 2T of Worcestershire sauce. The ketchup didn't sound appealing so I left that out. I used the frozen mixed veggies (coated w/ butter) from Trader Joes that I put under the mashed potatoes. I used a mixed blend of shredded cheese. I must admit, I also used the pre-made mashed potatoes from Costco. It was definitely a semi-homemade version but it was a huge success! I will definitely make it again - outside of St. Patty's Day.

Broiled Tilapia Parmesan

I reviewed the ingredients and was a little sceptical about making this but all the other reviews convinced me to give it a try. I had a dinner party for six and EVERYONE just raved about the dish. It comes out extremely tasty and tender. This is a must try that is a good alternative to Salmon.

D's Famous Salsa

This recipe is great! I much rather this method than the time consuming boiling routine. I used diced tomatoes w/ out spice and added extra garlic. I also added extra jalapenos by popular demand.

Spinach and Artichoke Dip

This dip had good reviews at my BBQ, however next time I make it I will alter it a bit. I would add an additional can on artichoke to balance out the cheese.

French Toast Souffle

I modified the recipe slightly and it came out perfect! I bought a loaf of THICK cinnamon swirl bread (they sell it at Costco), which I think was key. I reduced the eggs to 5 and also added 2/3 cups of brown sugar. I served this at my Mother's Day brunch, which I hosted and it was a hit with everyone! Someone even ate it as dessert with vanilla ice cream!

Amaretto Cake

This was a really easy dessert to make for last minute plans to attend a potluck. It was very moist and a big hit! My husband, who normally doesn't like cake, inhaled it. He said that it was the best cake he ever had!

Award Winning Peaches and Cream Pie

This was an excellent dessert! This comes from someone who is not big on fruit pies. I baked it while my guests were having dinner and served it almost immediately after it got out of the oven. Some people topped it off with French vanilla ice cream. I have to say that having this as a warm dessert was VERY delicious. I can't wait to make it again.

Split Pea Soup without Pork

I thought that this dish was missing something. It came out a lot more watery than I would have expected. I added heavy cream to give it density and make it more hearty. In the end it turned out good but I still would have liked it a little thicker like most other pea soups.

Cheesecake Topped Brownies

This turned out to be a big hit at a family dinner party. I used Giradelli Chocolate Chip Brownie mix and placed it in a round pan to give it more of a "cheesecake" look. I opted not to use frosting, which I was happy I did because the dish is already very rich. I will use this recipe again by trying different versions.
