Pulled Pork Enchiladas

You know you've got a hit when everyone goes back for seconds! That's what happened when I served this dish.

This dish is a take on my Turkey Enchiladas. Instead of turkey I used some of the leftover pulled pork from the weekend. I also added some black beans and diced tomato to enchilada filling to reduce the amount of meat I was using. Finally, I had some leftover Guajillo Sauce that I substituted for the enchilada sauce in the filling. I used the enchilada sauce under and over the enchiladas themselves.

I served the enchiladas on a bed of chopped lettuce and topped them with a dollop of light sour cream and chopped cilantro. The enchiladas and sauce worked out to be 370 calories with 13 grams of fat and a whopping 18 grams of fiber!

I still had some of he pork left (it was a big shoulder) after making this. Up next, pulled pork pizza!
