Pulled Pork Enchiladas

know you've got a hit when everyone goes back for seconds! That's what
happened when I served this dish.
dish is a take on my Turkey
. Instead of turkey I used some of the leftover
from the weekend. I also added some black beans and
diced tomato to enchilada filling to reduce the amount of meat I was
using. Finally, I had some leftover Guajillo
that I substituted for the enchilada

sauce worked out to be 370 calories with 13 grams of fat and a whopping
