Healthy Cooking Demo Video and Easy Pico de Gallo Recipe


I was recently invited to do two healthy cooking demonstrations as part of the "3-Minute Grille" on WCIA, channel 3, here in Central Illinois. I did them live this morning. It was kind of stressful, but a ton of fun to do! The first was my Weight Watchers inspired Chicken and Goat Cheese Quesadillas with fresh pico de gallo and light sour cream. I really love this recipe because it is so easy to do and can be adjusted to fit anyone's tastes. In my version, the chicken sauteed in chipotle seems to go so well with the crunchy veggies and creamy goat cheese. The pico adds wonderful raw, fresh flavors. Deal of the Day: Cooking with fresh ingredients is the most healthy way, but means you need to be able to do some chopping. Having a good sharp knife is important. I use and love my Chicago Cutlery Santoku Knife.
