Pork Chops with Blackberry Port Sauce

 

I love pork chops. I love fruit with pork chops. The most common fruit accompaniment for pork is apple, but I  wanted to try something a little different. I considered apricots (I love them too), but thought they are too sweet. After reading a number of different recipes, I settled on blackberries. They are tart and, I thought, would pair well with a sweet port to make the sauce. 

It came out delicious. The blackberries and the port worked very well with the chops, complimenting without overpowering. I will be making it again. I served it with some steamed mixed vegetables and a baked potato, making the chop and the sauce the star of the show.

At 266 calories, with 5 grams of fat and 4 grams of fiber, you can take in the show without any guilt.

I just posted my less than stellar experience with pork roast and dried fruit. I will definitly check out the recipe.

MMMmmm! I love me some pork chops, too. Just the other day I marinated some in a can of Pepsi, little applesauce and some tia sweet chili sauce....pretty tasty! Yours look good enough to eat right off the page!
