Chicken and Goat Cheese Quesadilla

 

I did another cooking demonstration last Saturday for Weight Watcher's in Champaign. They asked to demonstrate one of their recipes and then one of mine. I did their version of this recipe from their Weight Watchers Healthy Cooking Basics cookbook. It was very good, but as I was doing it, I couldn't help thinking of ways to make it better. I reduced the amount of chicken and increased the type and volume of veggies. I also spiced it up with some chipotle powder.

This is a strategy you can use for many recipes that you might want to make healthier, reduce the amount of higher-fat ingredients, and substitute healthy, complimentary ones. 

I really liked the flavor of the goat cheese with the sweet and hot peppers, there was just something about getting that creaminess, crunch and bite of spice and pepper all at once.

And for all that flavor, these quesadillas worked out to only 240 calories, with 11 grams of fat and 14 grams of fiber! Most of the fiber comes from using low-fat, high-fiber tortillas. There are a number of brands, but we like La Tortilla Factory's.

Be still, my heart! I love goat cheese with veggies like those! And those La Tortilla Factory tortillas are awesome - they taste good, and no guilt!
